When they are busy slurping down that “Neat round spaghetti you can eat with a spoon”, you shiv ‘em with an ice pick.

Ice pick would be a shank, not a shiv. Where I'm from, Shanks are metal, Shivs are non-metallic.

You was probably hearing about Goldilocks and Jack And Jill when we was rumbling with raccoons and possums who was trying to shiv us.

Hmm.. My understanding has always been that shiv is a noun, and shank is the verb form. (Not including the meat cuts.) You shank someone with a shiv.
