Tomorrows’ dinner here, though it will be some really nice, thick porterhouse steaks! Only problem, we like them rare, so it won’t be a long grill time. And it won’t be on charcoal, but on an infrared natural gas fired grill with hickory nut smoke to expertly define the flavor!
And for you smokers out there, broken up hickory nuts (with the outer shell removed, is better for smoking than the hickory wood, in our completely unbiased opinion... :)
(We have done it both ways, btw, many times, and that makes us experts!)
