The show could easily have been shot in color originally, probably just that the viewership was overwhelmingly watching on b&w tvs.

I had heard that a number of tv shows/movies were originally on color film but were broadcast in B/W because that is what most TV sets were.

In the case of I Love Lucy Dezi must have had his reasons and that was that. :)
