I understand these are "celebrities" who actively managing their public images, but even that's weird.

Yes and no. I think a lot of times celebrities put out these types of statements, usually upon the advice of their publicist, in order to get out in front of the tabloids. If you can say in your own words (or what your publicist writes for you) that, Yes. We broke up but it was mutual and amicable, due to conflicting schedules, career demands, but we still care for each other, blah, blah, blah, that may take the wind out of the more salacious tabloid stories stories true or untrue or only partially true.
Entertainment Tonight averages around 5 million viewers. And that’s just one of the gossip rags. Lots of people care, they probably shouldn’t, but they do.
