Were creeping into fall, and now is time to start thinking of those cooler months before winter arrives. Fall to me means Chowder.

I probably gained five pounds every time I go to Monterey’s Fisherman’s Wharf where every restaurant hands out their free samples of Clam Chowder.

Actually....the white kind.....not too many potatoes
The oyster bar at Grand Central had good chowda

My better half is lactose intolerant but loves clam chowder. It often messes her up when she has it.
I started getting whole lactose milk and reducing it. I substitute that for evaporated milk or cream. To make the thickening roux, I add flour to the bacon grease and then add a small bottle of clam juice to it gradually. Other than that my recipe is similar to yours.

If you ever get to Boston go to the downtown area and eat FRIED CLAMS and Clam Chowder at the restaurant known as Legals. I have eaten at Legal in Washington D.C. but the food at Boston was remarkable.

Even if you sub the clams, the bacon thing is still going to be a problem. Where are you going to get the fat? I guess you could use pastrami, but don’t you still have a problem with using meat and dairy products together?

I’ve been there a few times. The original is next to TF Green Apt across from the Hampton Inn. They have some good Chowdah!
