Where do you live?
In many areas amaryllis is very happy outdoors year round. It will go dormant in the winter, but then bloom in the early summer. Many bulbs need to go dormant in between bloom periods. So in really warm places, folks store them in the fridge for a false winter. Buried deep, amaryllis will be fine if the temp drops to zero.
I live in Maryland. Rarely do we get to below zero. (oh darn.. did I just annoy the weather gods?!)
My wife has tried for many years to have amaryllis bloom and only had one to do so, last year. We come from a area where they grow wild in roadside ditches and bloom like crazy. That really adds insult to injury. LOL
