My kids just dropped off some lemon grass stalks. My son-in-law expects me to cook with them, but it's too much. I need to figure out how to propogate them.

Stick them in a few inches of water in the sun. When they have a couple inches of roots they go in the dirt.

I don’t really have any recipes for lemon grass, but have been thinking that it might be a good thing to grow and use.
