I don't peel them and I slice about 1/4 - 3/8 inch

Unfortunately I don't have any kind of a production machine, so what I dry I eat.

I DO can a lot of bread and butter pickles, and I use a basic recipe but substitute one cup of the cups of sugar for a can of frozen apple concentrate, then I make up a pickling bag of cinnomon and cloves when I'm making the pickling juice.

How cool is that? I was thinking that for those who are counting carbs, the sugar might be reduced a little further and stevia could perhaps be used a flavoring.

Thanks for the discussion on dehydrated food. My Darlin’ just brought something to keep in mind when consuming dried foods without having rehydrated them: in order to process them the body will have to draw on the water it has in its reserves in order to break them down. It is a good idea to drink a little extra water when eating them.
