Oh yeah, almost forgot. The above recipe makes about 1 cup of wet rub, enough for 2 pounds of meat.

I love rum cake. I use my mil’s recipe which has coconut in it and the pan is coated with sugar which gives it a sweet crystalized crust. Yummy! The story of your rum cake reminded me of a lady at our church when I was growing up. She always brought pineapple upside down cakes. Births, out of town guests, weddings, deaths, every life and church event was accompanied by her cake which was baked and delivered with love. Pineapple upside down cake is still one of my all time comfort foods.

Last night, I tweekeda similar recipe with what I had on hand. It’s an easy and welcome change from the usual steamed or mashed cauliflower. It would go well with Italian or Indian.

Roasted Cauliflower and Tomatoes:

1 head of cauliflower cut up
1 can of diced tomatoes in olive oil
Season with tumeric, cumin, garlic, salt and pepper
Lemon juice

Spray a 9x15” baking pan and dump in the cauliflower and tomatoes. Sprinkle on the seasonings. Bake uncovered at 450 for about 30 minutes. At the 15 to 20 minute mark, stir and continue baking.

Take out of oven, sprinkle on a bit of lemon juice to add some zip. Stir to combine. Serves 6.

None of my small patch of asparagus ever makes it to the kitchen. I break off a stem to munch on when I’m working in the garden. Yumm!

I'd certainly try it if they are going to go bad. The nice thing about the recipe is that it is very adaptable. The last batch I made was with a bag of mandarin oranges that a neighbor had bought and were going to go bad.

I try not to let anything go to waste. I'm too poor to waste. ;)

I was looking at pineapple upside down cake recipes with the thought of making one for Easter ..... I wanted something ‘different’ from a regular cake. I ended up making a really good apple/pear cobbler instead.

Oh those look good! Wish I had had that recipe for the luncheon I attended this morning. I took pink lemonade cupcakes, but would have loved pineapple upside down cake.
