Soft, stinky, blue, raw and fresh. No, not oysters; rather, different types of cheese. With evidence of production dating to 2000 B.C. in Egypt, cheese was likely invented by accident when milk was transported across the scorching desert in the cleaned-out stomach of an animal (an ancient milk jug). Milk + Heat + Acid = Cheese. While it can be made from yak milk in Iceland, or moose milk in Sweden, local turophiles should be thrilled that some of the world's best cheese can be found right here on the West Coast.

Sorry you are sorry but the experts at the world competition in Wisconsin differ soundly from you:)
My favorite is Cowgirl Creamery in Sonoma County.
Booyah to the Cougar Gold. Some grapes and wine and that cheese...good times.
>>>Do you mean they sell bricks and mortar, in addition to cheese, at their shop?
They do sell cheese in bricks... does “brick & mortar” in this context really require a defininition for you, or was yours an attempt at humor that failed?
I concur, Tillamook is the best!
All the cows that produce the milk for Tillamook dairy products are located at a huge dairy farm in North-central Oregon. There are no Tillamook cows in Tillamook, except for maybe a few for the benefit of tourists.
You should try the Tillamook sharp Cheddar that’s been aged for 10 years. Quite good!

What a cheese snob!!! ;)
There’s only been about three or four generations of Swiss that have been making cheese so the East Coast cheese makers have had more time to perfect theirs. Give the West Coast a generation or more to catch up.
LOL!
Maytag excellent blue... west coast alternative is Pt Reyes... Minnesota’a Saint Pete is awesome , as is Great Bay from Massachusets and Cashill from Ireland.

I love Tillimook cheese...sharp. buy it by the baby brick and with fresh pears or golden delicious apples. Yum.
Give me real feta cheeses which means made from sheep’s milk. Best I ever had was from Bulgaria but Greece France and others do a good job. Feta with some olives, some raw onion, some good bread and some good canned tuna....yum
I like Tillamook because it’s decent and I can afford it. There’s also Rumiano, headquarters in Willows, CA but they have an outlet and IIRC factory in Crescent City, where they have an outlet store. Free samples. Their dry Jack is really good.
I am not questioning your comments about Cabot, just Tillamook. There are many different catagories within the cheese competition. Different ages, types & flavors.
Tillamook won the 2010 best in world medium cheddar, their signature cheese. That same year Cabot won first place in a sharper cheddar in which I believe Tillamook came in right behind.
Tillamook does not make a special competition cheese for these competitions as many of the others do. When you buy Tillamook cheese you are buying the cheese that won the competition.
