Meg, I remeber some wonderful Sleigh Rides and Hay Rides - singing Christmas Carols and drinking hot chocolate and munching down on confectioner’s sugar donuts! Thanks for the memories!

APRICOT BREAD
3 cups flour
2 t. soda
2 cups water
1 lb. diced apricots
2 cups sugar
3/4 cups wesson oil
1 t. cinnamon
1 t. salt
2 eggs, beaten
1 cup coarsley chopped pecans
Combine water, apricots, cinnamon, sugar & oil
boil 5 mins and let cool. Add flour, soda, and salt into cooled mixture.
Add eggs & pecans. Mix and pour into 2 5x9 loaf pans, greased and floured.
Bake 350 for one hour.

This is really good!
CHOCOLATE CHEESECAKE
2 coffee measures ground espresso coffee
2/3 cup boiling water
Make a strong extract of espresso with coffee and boiling water. Measure ½ cup and cool.
(I just use strong coffee)
3 packages (8 ounces each) softened cream cheese
1 cup sugar
2 eggs
1 cup sour cream
1 package (8 ounces) semisweet chocolate squares melted
1 teaspoon vanilla extract
In large bowl beat cream cheese, sugar, and eggs until blended.
Beat in sour cream, chocolate, espresso concentrate and vanilla. Pour into lined springform pan.
Bake at 350 for 45 minutes until puffed at sides.
(soft center will firm up during cooling) Cool, then chill 3 or more hours until firm in center. Remove side of pan.
CRUST
Crush 24 chocolate wafers into fine crumbs. Mix with ¼ cup soft butter or margarine and ¼ teaspoon cinnamon until crumbly. Press into 8 inch springform pan
I use the Oreo Pie Crust...put it in the springform pan. (I’m using 9” pan)
I use dried apricots.

In every other religious system, people pursue their god, hoping that through good behavior, keeping of rituals, good works, or other efforts they will be accepted by the god they pursue.
The British poet Francis Thompson catches the profound nature of this reality when he writes of the relentless pursuit of God in his life. In his work titled The Hound of Heaven, he writes that as he fled from God he couldnt outrun those strong feet that followed . . . with unhurrying chase and unperturbed pace. But Gods untiring pursuit of the wayward is not just Thompsons story. At the heart of the Christmas message is the wonderful truth of Gods pursuit of every one of us. As Paul affirms, God sent forth His Son, born of a woman, born under the law, to redeem those who were under the law (Gal. 4:4-5).
And its not just the Christmas story. Its the story of Gods pursuit of Adam and Eve after the fall. His pursuit of me! His pursuit of you! Where would we be today if God werent the Hound of Heaven?
