Spinach and Chicken Salad w/ Honey Dijon Dressing and Cactus Cooler/Berry Sherbet Floats
Gin and tonic (Bombay Sapphire) while waiting for my husband to grill the pork chops.
Will also be grilling corn on the cob wrapped in aluminum foil with a pat of real butter. Same with asparagus. As well, will be grilling some hot peppers (directly on grill).
On the stove top will be some Near East rice with garlic and herb. Once this is done, the hot peppers will be sliced and mixed into the rice along with a few tablespoons of extra virgin Colavita olive oil.
Hence, you have one of the best summertime meals on the planet. Along with a pitcher or two of Patron Silver margaritas.
The NY strip was purchased from the butcher shop. Yes, much more expensive than supermarket meat but at the same time, still cheaper than going to some chain steakhouse like Outback or Longhorns.
Of course, Friday night is only the beginning of the weekend. We are doing a clambake on Saturday with a pot of steamed clams and a pail or two of 2 pound lobsters along with plenty of steamed corn on cob lots of beer.
On Sunday, we will probably smoke a couple racks of ribs with rice, hot peppers and another pitcher or two (or three) of Patron Silver margaritas.
The backyard is freshly mowed and plenty of lawn chairs to get some serious reading done. The portable satellite radio will be cranking on the picnic table with a choice of 150 or so commercial free music stations.
Books. I have a stack of books to tackle this weekend. A book on the Secret Service, that biography of Steve Wozniak, a couple of novels and a book about Fred Harvey, the guy who opened the first chain of restaurants out in the American West just over a century ago.
I figure to gain a few pounds but it is summertime and it's time to start storing up some fat for the long New England winter ahead.
Oh, and we're having Copper River sockeye salmon, with maple syrup/butter glaze, fresh asparagus with olive oil, sea salt, and parmesan cheese, and butterflake rolls. Washed down with Vernor's ginger ale.
sounds close to what I had as a child, mayonaise sandwich. That was it, just mayo...I now have a cup of coffee on one side and a pepsi on the other with a chocolate chip cookie in front of me...
