You need to stop eating at fast food restaurants, which in my experience are the only places that dictate the condiments that go on the burger. In most real restaurants, where people sit at a table and order off a menu presented by waitstaff, burgers do not come preloaded with mustard, mayo, or ketchup. If they do and you find that objectionable, then find someplace else to eat.

No, their job is take orders FROM THE MENU and see that the food is delivered as ordered. They are not required to reinvent the menu to accommodate every taste, desire, and food allegy.
