I don’t think there’s any good way of doing a real wipe without destroying the restore partition. That’s the point of the restore partition. I’d wipe the hard drive and sell it as-is, no operating system. Or if the security issues are real, pull the hard drive and sell it brainless.

I am rather keen to destroy the partition, if by that you mean destroy the data within; and then to restore it from the restore partition, maybe let it get updates (or leave that to the new owner) and sell it as "used, restored to original configuration." Selling it without HD is a less desirable, acceptable option.
