I call thoae country hams and soal them 24 hours then scrub and wash off the exterior. A true or genuine Smithfield ham I soak 48 hours because of the longer cure. I haven’t eaten any in years. I do like that wine, used to buy it alot when I lived in NJ, but ever since we went to Orievto, Italy I drink that one now. Never been a fan of Brie. BUT I have been to Joe T. Garcia’s for dinner in Fort Worth once, neat place back then. A landmark.

Joe T's made a bunch of breakfast burritos for some returning airmen from the sand box a few years ago. I was tasked to oversee serving them and coffee (not
many non-deployed airman were hurt or injured for that task). Joe T. gets high marks in my book.

I soak hams too. I try to use spring water in the cold house for that, assuming the spring is running.
