That Brie Cheese stuff has a coat of mold on it. Not that I sit around and sip wine and eat Brie. Much. Recently. Ok. Maybe a half pound of cheese and a couple of bottles of Chateau Neuf de Pap. But I'm uptown in Ft. Worth... What do you expect from a mountain man?

I call thoae country hams and soal them 24 hours then scrub and wash off the exterior. A true or genuine Smithfield ham I soak 48 hours because of the longer cure. I haven’t eaten any in years. I do like that wine, used to buy it alot when I lived in NJ, but ever since we went to Orievto, Italy I drink that one now. Never been a fan of Brie. BUT I have been to Joe T. Garcia’s for dinner in Fort Worth once, neat place back then. A landmark.
I love Brie. Too bad it’s fattening, because I could eat a small wheel in one sitting.
I nuke it in the microwave just long enough to get it soft. Great on crusty Italian bread with a glass (or two) of wine, and some grapes or pears.
Regarding your cats: I feed my neighbor the lady federal marshal whenever she is out of town or has to work long hours on a case. One cat is sociable and always greets me at the door. The other one is invisible. I never see him. Apparently he only likes his owner, and spends most of his time hiding under the bed and only comes out to eat when I have left.
When I first started feeding them, I spent one day going over every inch of the house trying to find him. I was afraid that somehow he had gotten out. Nope, he was discovered holed up under the bed way back in a corner almost invisible. He just doesn’t like too many people.
