They sure are. There’s a restaurant here in my neighborhood that grates them (cooked, but not too soft) finely. then tosses them with fresh squeezed orange juice and serves them as a beet ribbon salad with walnuts and dates. It’s really good.
Every time I stop at a Ruby Tuesday I make a bee line to their salad bar. They always have beets, and I always put them on my plate. My wife hates them because her parents made her eat them when she was a child
