The vegetable soup I made yesterday has cabbage, brocolli, and lots of garlic! Yum!
Can I use zucchini in soup? I have some that grew too big to BBQ.

Yes, just slice it thinly. I have zuccini in my soup, too, along with carrots and onion. It was supposed to include green beans, but we didn’t have any.

You can also fry the larger zucchini in a light batter (liker tempura) and you can shred it to make zucchini bread, which is AWESOME!!!
If you fry it, the pieces should be about 1/4” thick.
(And yes, I have a recipe for zucchini bread!)
