You can also fry the larger zucchini in a light batter (liker tempura) and you can shred it to make zucchini bread, which is AWESOME!!!

If you fry it, the pieces should be about 1/4” thick.

(And yes, I have a recipe for zucchini bread!)

We don’t have an oversupply of zucchini: I just buy a couple at a time from Wal-mart.

HI, Face!!!

tonight, "my sister of the heart" (as i'm back "home" for 2 days) is making pinto beans with ham-hocks, fried green tomatoes & baked squash.

i'm providing the cornbread muffins & fried cornbread fritters.

it will be: YUM!!!
