Hmmm...if they’re that worried about contamination, why use an open vat?

To be honest, I'm extrapolating from a visit to a cosmetics factory. They had huge open vats of lotions and makeup, and as we walked along the catwalks (kitty ping?) between them we were warned not to "dip" because they would have to dump the whole vat. We're talking 5000 gallon vats here.

So I assumed that since the chocolate is to be eaten, the rules about contamination would be at least as strict as for skin-care products. I may be wrong (but it would of course be the very first time in my life) [rolls eyes heavenward], but I'm pretty sure that if someone were to die in there, they'd have to take drastic measures with the chocolate and the cleaning of the tank itself, and also that they're probably insured.
