I don’t know why they say it but the Nicene Creed is just a manmade creed and if a Catholic wrote it, it would reflect what they believed at that time. You are not saved through baptism but through faith in the Lord Jesus Christ. THEN you should be baptized. Infants can’t make that decision. I have no problem with people baptizing babies to set them apart for the Lord, but those babies aren’t saved through that rite.

So, nearly all non-Catholic Christians profess the Nicene Creed, but they DON'T BELIEVE IT?

The Nicene Creed is VERY CLEAR that there is ONE Baptism for forgiveness of sin.
