I have been keeping an unofficial list of visitors/posters that you can send pings to for the new thread - when that comes in a couple of weeks... I think there are about 130 or so on the list - I alphabetized them so that you can check to see if I missed someone you want to send it to. Maybe I should post it and then others can see if there is someone I missed. Let me know...

FRAUDSTERS CONTINUE TO EXPLOIT TELECOMMUNICATIONS RELAY SERVICES (TRS)

07/08/09—The IC3 continues to receive complaints pertaining to scam artists using Telecommunications Relay Services (TRS) to defraud U.S. businesses and consumers. Under Title IV of the Americans with Disabilities Act, all telephone companies must provide TRS for individuals with hearing impairments or speech impairments.

This IC3 alert is to make the public aware of the continuing abuse of TRS to exploit U.S. businesses. Recent reports indicate scam artists are using TRS to exploit auto repair shops. The scam entails the fraudster using TRS to request services for a vehicle. The fraudster claims the vehicle has to be shipped to the auto repair business and requests the repairs and shipping fees be charged to a credit card. Unbeknownst to the business, the credit card is fraudulent or stolen; however, the charges initially go through without any complications. The business is then directed to wire the money to the shipper to cover the shipping costs. It is not until the shipper’s money is wired that the business is notified of the fraudulent credit card; therefore, the business bears the loss.

ASIAN EXTORTION SCHEME

06/10/09—The FBI is currently aware of a nationwide attempt to extort ethnic business owners, mostly of Asian decent, through telephonic threats of violence. The telephone calls appear to be originating from foreign countries. The caller acquires an adequate amount of open source information about the victim through Internet searches. This misleads the victim into believing the subject has personal knowledge about the victim. There have been no reported incidents of violence actually perpetrated to date.

Individuals who receive phone calls or e-mails containing threats of violence and their personally identifiable information (PII) are encouraged to contact law enforcement as well as file a complaint at www.ic3.gov.

CIRCULATION OF FRAUDULENT E-MAIL CLAIMING TO BE FROM U.S. CUSTOMS AND BORDER PROTECTION (CBP)

04/27/09—A spam e-mail claiming to be from former CBP Assistant Commissioner Thomas S. Winkowski is currently being circulated. This attempt to defraud is the typical e-mail scam using the name and reputation of a federal government official to create an air of authenticity.

The spam e-mail indicates the CBP has stopped a Diplomat who is carrying a consignment to be delivered to the recipient’s residence. This consignment allegedly contains millions of dollars, which is revealed to be an inheritance for the e-mail recipient.

As with many other scams, this e-mail advises the recipient they will be permitted to access this inheritance once the recipient has given the sender of the e-mail their personal information.

This e-mail is a hoax. Do not respond.

The U.S. CBP does not send unsolicited e-mails. Consumers should not respond to unsolicited e-mails or click on any embedded links, as they may contain viruses or malware.

It is imperative consumers guard their personally identifiable information (PII). Examples of a person’s PII include, but are not limited to: date of birth; social security number; and bank account numbers. Providing your PII will compromise your identity.

Letter to the Editor Regarding the Terrorist Watch List

(A version of this letter appeared in the Fredericksburg, Virginia Free Lance-Star on June 30, 2009)

Your recent editorial (“List full of holes,” June 25, 2009) included a number of inaccurate statements—and critical omissions—about the U.S. government’s consolidated terrorist watch list.

Neither the Terrorist Screening Center (TSC) nor the Department of Justice has ever stated that the terrorist watch list contains more than 1 million names. Instead, the Department of Justice explained in its recent report, as has the Terrorist Screening Center numerous times before, that the terrorist watch list contains 1.1 million “terrorist identities” representing approximately 400,000 individuals. This is because a single individual can generate numerous “terrorist identities” or records. For example, if a suspected terrorist uses two different names and three fake dates of birth, TSC would generate six “terrorist identities” or records.

The editorial also failed to include the widely-reported fact that less than 5 percent of the individuals on the watch list are U.S. citizens or permanent legal residents. The vast majority are not even in the U.S.—and the watch list was established to help keep it that way.

No one is watch-listed based on religion or ethnicity. Individuals are only watch-listed based on a reasonable suspicion to believe they are engaging in terrorism or terrorist activities.

Contrary to what the editorial stated, no one has ever been found to be on the watch list because of “mistaken identity.” Some individuals may encounter delays during screening because their name is similar to that of a watch listed individual. But, those encounters can almost always be quickly resolved through the use of additional indentifying information that clarifies whether or not an individual is on the watch list or just an innocent person with a similar name.

The editorial also omitted a critical finding the Government Accountability Office made about the watch list. This independent Congressional investigative agency found that “[t]he watch list has enhanced the U.S. government’s counterterrorism efforts.” In short, the watch list has made America safer.

Security measures deserve public scrutiny, but your readers deserve an accurate presentation of the facts involved.

Arlington Security Guard Arrested on Federal Charges for Hacking into Hospital’s Computer System
Defendant Allegedly Posted Video of Himself Compromising a Hospital’s Computer System on YouTube

DALLAS—A man from Arlington, Texas, who worked as a contract security guard at the Carrell Clinic on North Central Expressway in Dallas, has been arrested on felony charges outlined in a criminal complaint, announced Acting U.S. Attorney James T. Jacks of the Northern District of Texas.

Late Friday evening, agents with the FBI arrested Jesse William McGraw, a/k/a “GhostExodus,” “PhantomExodizzmo,” “Howard Daniel Bertin,” “Howard William McGraw,” and “Howard Rogers,” age 25. McGraw appeared yesterday afternoon before U.S. Magistrate Judge Wm. F. Sanderson, Jr., for his initial appearance. He was detained until his probable cause and detention hearing set for Wednesday, July 1, 2009, at 2:30 p.m., before Judge Sanderson.

According to the affidavit filed in support of the criminal complaint, McGraw is the leader of the hacker group, “Electronik Tribulation Army.” He was employed as a security guard for United Protection Services, in Dallas, and worked the night shift, from 11:00 p.m. to 7:00 a.m. at the Carrell Clinic hospital.

The affidavit alleges that between April and June 2009, McGraw committed computer intrusions of several computers in the Carrell Clinic hospital building, including computers controlling the Heating, Ventilation and Air Conditioning (HVAC) system and computers containing confidential patient information. The HVAC system intrusion presented a health and safety risk to patients who could be adversely affected by the cooling if it were turned off during Texas summer weather conditions. In addition, the hospital maintained drugs which could be adversely affected by the lack of proper cooling. McGraw, who used the online nickname “GhostExodus,” posted pictures on the Internet of the compromised HVAC system and videos of himself compromising a computer system in a hospital.

Further investigation revealed that McGraw was planning to use his compromised systems to commit additional crimes on or before July 4, 2009, a date that McGraw, according to the affidavit, called “Devil’s Day.” He posted videos on the Internet which included admonition to other hackers to assist him in conducting unauthorized computer intrusions in support of a “massive DDOS” on July 4, 2009. DDOS is an acronym for Distributed Denial of Service and is a type of computer attack in which an unauthorized individual assumes control of other computers and uses the massed ability of those computers, over which they have unauthorized access and control, to attack targeted computers. The investigation also revealed that McGraw recently provided United Protection Services his one week notice and his last day of work was to be July 3, 2009, the day before the scheduled DDOS attack.

Upon McGraw’s arrest on Friday evening, the Carrell Clinic IT staff identified and remediated the numerous compromised computers in the building.

A federal complaint is a written statement of the essential facts of the offenses charged, and must be made under oath before a magistrate judge. A defendant is entitled to the presumption of innocence until proven guilty.

In stating that the investigation is ongoing, Acting U.S. Attorney Jacks praised the investigative efforts of the FBI and Texas Attorney General Criminal Investigation Division. Assistant U.S. Attorney C. S. Heath is prosecuting.

FBI Releases 2008 Bank Crime Statistics

Today the FBI released bank crime statistics for calendar year 2008. Between January 1, 2008 and December 31, 2008, there were 6,700 robberies of financial institutions*, as well as 121 burglaries and 28 larcenies reported. This represents 6,849 reported violations of the Federal Bank Robbery and Incidental Crimes Statute.

“While the statistics released today show a slight decrease from the 6,933 reported violations in 2007, we recognize that these crimes take a serious financial toll on the community,” said Assistant Director Kevin Perkins, FBI Criminal Investigative Division. “The FBI remains committed to working with local authorities and bank officials to catch bank bandits and prevent bank crimes from occurring.”

Highlights of the report include the following:

Of the 6,849 total reported violations, loot was taken in 6,225 incidents (91 percent).
*
The total amount taken was valued at more than $61.9 million.
*
A note was used in 3,833 incidents; a firearm was used in 1,734 incidents; and robbers threatened the use of a weapon in 2,839 incidents.
*
Acts of violence were committed during 293 (4 percent) of the reported incidents. These acts included 78 instances involving the discharge of firearms, 171 instances involving assaults, and 53 instances of hostage situations.
*
Twenty-one deaths occurred during this reporting period, including 17 perpetrators, one employee, and three deaths classified as “other.” No law enforcement officers were killed responding to bank crimes incidents in 2008.
*
Most violations occurred on Friday. Regardless of the day of the week, violations between the hours of 9:00 a.m. and 11:00 a.m. were the most common.

These statistics were recorded as of April 23, 2009. Note that not all bank crimes are reported to the FBI, and therefore the report is not a complete statistical compilation of all bank crimes that occurred in the United States.

FBI Issues 2008 Mortgage Fraud Report

According to the Federal Bureau of Investigation’s 2008 Mortgage Fraud Report, released today, mortgage fraud Suspicious Activity Reports (SARs) referred to law enforcement increased 36 percent to 63,713 during fiscal year (FY) 2008, compared to 46,717 reports in FY 2007. While the total dollar loss attributed to mortgage fraud is unknown, financial institutions reported losses of at least $1.4 billion, an increase of 83.4 percent from FY 2007.

“Mortgage fraud hurts borrowers, financial institutions, and legitimate homeowners,” said Assistant Director Kevin Perkins, FBI Criminal Investigative Division. “The FBI, in conjunction with our law enforcement, regulatory, and industry partners, continues to diligently pursue perpetrators of mortgage fraud schemes.”

Other key findings presented in the report include:

* Sixty-three percent (1,035) of all pending FBI mortgage fraud investigations during FY 2008 involved dollar losses totaling more than $1 million.
* More than 3.1 million foreclosure filings were reported on approximately 2.3 million properties nationally during FY 2008, up 81 percent from FY 2007 and 225 percent from FY 2006.
* As of FY 2008, the western region of the United States had the most pending FBI mortgage fraud-related investigations.
* The top 10 mortgage fraud states for 2008 were California, Illinois, Texas, Georgia, Ohio, Colorado, Maryland, Florida, Missouri, and New York.
* Rhode Island, Massachusetts, Pennsylvania, and the District of Columbia were newly identified as having significant mortgage fraud problems.
* Criminals continued using old schemes, including property flipping, builder-bailouts, short sales, and foreclosure rescues. Additionally, in response to tighter lending practices, they facilitated new schemes, such as reverse mortgage fraud, credit enhancements, condo conversion, loan modifications, and pump and pay.

FOR IMMEDIATE RELEASE – July 7, 2009 – Trans-Packers Services Corp. of Brooklyn, NY, is recalling approximately 6,300 packets (net wt. 100 g) of Dairy Shake blends because such blends contain instant non-fat dry milk manufactured by the Plainview Milk Products Cooperative. Plainview has recently commenced a voluntary recall of instant non-fat dry milk and other ingredients that have the potential to be contaminated with Salmonella bacteria.

Salmonella is an organism which can cause serious and sometimes fatal infections in young children, frail or elderly people, and others with weakened immune systems. Healthy persons infected with Salmonella often experience fever, diarrhea (which may be bloody), nausea, vomiting and abdominal pain. In rare circumstances, infection with Salmonella can result in the organism getting into the bloodstream and producing more severe illnesses such as arterial infections (i.e., infected aneurysms), endocarditis and arthritis.

Trans-Packers has not received any reports of illness related to the Dairy Shake blend. The product affected by this recall includes single-serve packets of Dairy Shake blend packaged in a preformed barrier pouch, which were distributed through Emergency Essentials, Inc. and Saratoga Trading Company located in Orem, Bluffdale and Saratoga Springs, Utah.

The particular blends and affected lot numbers are:

* 6,000 packets of Strawberry/Banana Flavor Dairy Shake lot # 8324,
* 200 packets of Vanilla Flavor Dairy Shake lot # 9132 and
* 100 packets of Strawberry Dairy Shake lot # 7225.

Consumers who have any of the Dairy Shake blends from the affected lot numbers should not consume the product; and are urged to destroy such product.

“Food-miles” became a hot subject a few years ago. It wasn’t long ago that cities
like Toronto largely fed themselves. But now, the average pear you buy has travelled
6,000 kilometres.

Although vilified by locavores, food travelling long distances by truck doesn’t

Street Farmer - Will Allen in The New York Times

Today Allen is the go-to expert on urban farming, and there is a hunger for his
knowledge. When I visited Growing Power, Allen was conducting a two-day workshop
for 40 people: each paid $325 to learn worm composting, aquaponics construction
and other farm skills. “We need 50 million more people growing food,” Allen told
them, “on porches, in pots, in side yards.” The reasons are simple: as oil prices
rise, cities expand and housing developments replace farmland, the ability to grow
more food in less space becomes ever more important. As Allen can’t help reminding
us, with a mischievous smile, “Chicago has 77,000 vacant lots.”

Healthy persons infected with Salmonella often experience fever, diarrhea (which may be bloody), nausea, vomiting and abdominal pain. In rare circumstances, infection with Salmonella can result in the organism getting into the bloodstream and producing more severe illnesses such as arterial infections (i.e., infected aneurysms), endocarditis and arthritis.

The product was distributed to one distributor in NY and sold mail order through the Internet.

The product should not be used or consumed. Consumers who have any of the product are urged to destroy it. Lewis Laboratories has not received any notification of consumer illness associated with the consumption of its product.

The recall was initiated when Lewis Laboratories was notified by its supplier, that the product contained an ingredient supplied by Plainview Milk Products Cooperative, which has issued a voluntary recall on the non-fat dried milk and whey protein because of the potential to be contaminated with Salmonella.

Lewis Laboratories International, Ltd., says it expects to resume sales shortly.

Consumers with questions regarding the recall should contact Lewis Laboratories 1-800-243-6020 between 9:30 am and 5:00 pm EST .

This is an extension of the voluntary recall being conducted by one of the company’s suppliers, Plainview Milk Products Cooperative.

Salmonella is an organism which can cause serious and sometimes fatal infections in young children, frail or elderly people, and others with weakened immune systems. Healthy persons infected with Salmonella often experience fever, diarrhea (which may be bloody), nausea, vomiting and abdominal pain. In rare circumstances, infection with Salmonella can result in the organism getting into the bloodstream and producing more severe illnesses such as arterial infections (i.e., infected aneurysms), endocarditis and arthritis. Max Muscle has not received any reports of illness related to the whey protein concentrate.

The products being recalled include 7 products and 101 lots. The products in question were manufactured in January and February of 2009, and distributed nationwide beginning in January of 2009. Only the products and lot numbers listed in the table below.

Max Muscle has provided information on the voluntary recall to its Chain of Franchises and retail customers nationwide who purchased the specific lots regarding this voluntary recall via fax, phone or mail. Max Muscle has notified the FDA of its actions and is fully cooperating with the Agency.

Customers are advised not to consume any of these products and should return them to the store where they were purchased for a full refund. Consumers with additional questions may call the Max Muscle Customer Service Department at 1-888-MAX-MUSCLE (1-888-629-6872), Extension 119, during normal business hours (Monday to Friday, 8:00 am to 5:00 pm, Pacific Standard Time).

Hazard: The pacifier mouth guard and the ventilation holes are too small and fail to meet federal safety standards. The pacifier could pose a choking and aspiration hazard to young children.

Incidents/Injuries: None reported.

Description: This pacifier has a ring-shaped handle and a round-shaped mouth guard with two ventilation holes. “Jaloma” is printed on the handle side of the mouth guard and the nipple has a gel-like liquid inside.

Sold at: Retail stores in New Jersey and New York from February 2008 through March 2009 for about $1.

Nine Companies Penalized for Selling Children’s Products that Violated the Federal Lead Paint Ban
WASHINGTON, D.C. - The U.S. Consumer Product Safety Commission (CPSC) announced today that nine children’s product manufacturers, importers and sellers have agreed to pay more than $500,000 in civil penalties for violating the federal lead paint ban.

The penalties settle allegations that the firms knowingly manufactured, imported, or sold toys and other children’s articles with paint or other surface coatings that contained lead levels in violation of federal law. The settlements have been provisionally accepted by the Commission.

These products were recalled in 2007 and 2008, and include items such as toys, children’s metal jewelry, children’s pens, metal water bottles, pencil pouches, sunglasses and children’s Halloween pails and baskets. Tests showed that paint or surface coatings on these children’s products contained lead in excess of 600 ppm, or 0.06 percent, by weight. One firm’s testing revealed that its products contained surface coatings with nearly 60 percent lead. In 1978, a federal ban was put in place which prohibited toys and other children’s articles from having more than 0.06 percent lead (by weight) in paints or surface coatings. Lead can be toxic if ingested by young children and can cause adverse health consequences.

The Seasteading Institute, committed to the ongoing development of ocean communities, has just announced the winners of their first annual design content. Could people really end up living in these hypothetical off-shore communities?

The design contest had five categories: Overall, Best Picture, Aesthetics, Personality, and Community Choice. (The winners from each category are shown in this post in that particular order, so the first design up top is the Overall winner, the one to the right is Best Picture, and so on.) With prizes ranging from $250 to $1000, the design contest attracted both amateur and professional architects from around the world, as the winners hailed from such far-flung locales as Estonia, Hungary, Brazil, and Minnesota.

Seasteading, a term derived from combining “sea” and “homesteading”, is a general term given to the notion of either converting existing structures, such as old boats or disused oil rigs, or custom-building new ones to allow people to live in the middle of the ocean. Generally, this also includes the interrelated goal of establishing a sovereign state on the open seas, away from any existing governmental structures on dry land. Patri Friedman and Wayne Gramlich - whose 1998 article “Seasteading – Homesteading on the High Seas” is generally given credit for popularizing the term - founded the Seasteading Institute in 2008 in order to better organize the seasteading effort.

Perhaps the most famous - and, to some extent, the only - example of successful seasteading is the microstate of Sealand, which started life as the World War II sea fort HM Fort Roughs. Located six miles off the coast of Suffolk, Sealand was occupied by Roy Bates and his family in 1967. Crowning himself Prince Roy, Bates declared the disused fort to be the independent Principality of Sealand. Although the “country” is only the size of about two tennis courts, the Bates family has lived on the desolate fort for much of the last four decades. As one might well imagine, Sealand’s history is about as eccentric as it origins, including an attempted invasion by a group of German and Dutch entrepreneurs in 1978, which forced the exiled Prince Roy to take up arms to reclaim his country. (How that hasn’t become a movie yet is completely beyond me.)

Sealand’s story is well worth reading up on, as it’s just about the only topic I know of that can make the differences between de jure and de facto diplomatic recognition absolutely fascinating. Still, the question remains what, if any, long-term viability seasteading has. The success of the Bates family at least suggests it’s possible to exist out on the open sea with limited government oversight (although the British government did still handle all the mail sent to Sealand), and the Seasteading Institute has raised over 500,000 dollars in support of their work. Of course, whether that would be enough to build even a fraction of any of these designs is an open question. In the meantime, at least we can take some small comfort in the fact that, should Waterworld ever prove terrifyingly realistic, at least a few people will be well prepared.

FOR IMMEDIATE RELEASE – Los Angeles, CA - July 6, 2009 - Kowalke Family Sprouts of Los Angeles CA is recalling all Kowalke Family Sprouts Brand Alfalfa Products with sell-by dates from June 18 through June 30 because they may be contaminated with Salmonella, which can cause serious illness. Mike’s Produce, Inc. dba Kowalke Family Sprouts is voluntarily recalling the alfalfa products after receiving notification that a surveillance sample taken at a retail location with a June 21 sell-by date tested positive for Salmonella.

No illnesses have been reported from these products. Kowalke Family Sprouts has informed the Food and Drug Administration of its actions and is fully cooperating with the Agency.

The alfalfa sprouts tested negative for the presence of Salmonella prior to being shipped to retailers. Nonetheless, the firm is recalling all sprouts from this seed lot out of abundance of caution in response to being notified of alfalfa sprout seeds that may have been contaminated with Salmonella.

Kowalke Family Sprouts meets all FDA disinfection, processing, and pathogen testing guidelines. In addition, the FDA tested for the presence of Salmonella on sprout growing equipment, food contact surfaces, walls, floors, and drains at the Kowalke Family Sprouts facility. All tests results were negative. The FDA found no Salmonella at the Kowalke Family Sprouts facility.

Kowalke alfalfa products are sold in 4 oz, 8 oz, 1 pound and 5 pound clear plastic, clam shell packages. Two other Kowalke products also contain alfalfa sprouts - the Dinner Salad in a 6 oz package and the Onion/Alfalfa Mix in a 4 oz package.

These products were sold to produce distributors in Los Angeles and to retail stores in Southern California, Nevada, and Arizona. It is possible the sprouts may have been transported to other states.

Consumers are being warned about two U.S.-made brands of energy drinks after both were found to have been subject to tampering.

Health Canada issued a warning about Hardcore Energize Bullet liquid energy drink, which is manufactured in Pennsylvania and sold in Canada in vials.

The reason for the recall was because one vial was found to have been subject to tampering, Health Canada said.

The U.S. Food and Drug Administration, meanwhile, is also warning about Hardcore Energize Bullet, and about New Whey liquid products, as well. New Whey items are also sold in test-tube vials and consumed in a single shot.

A utility knife blade was found in one vial of each product, the FDA said.

No injuries have been reported, the U.S. agency said.

Hardcore Energize Bullet is packaged in 85.7-millilitre vials and comes in two flavours, Blue Rage and Black Rush, Health Canada reported on its website.

New Whey liquid products are manufactured and sold in the United States. The manufacturer for both liquid products, Protica Inc., of Whitehall, Pa., is investigating the tampering, the FDA said.

3 secrets for success, 6 delicious recipes

The heat of summer always inspires me to get out the ice cream maker. (I use an affordable Cuisinart model that’s great. Check out our ice cream maker review if you’re considering buying one.)
Even though I love ice cream, I still want to keep it reasonable and healthy, so at EatingWell we created lower-fat (but still rich-tasting) Homemade Vanilla Ice Cream and Homemade Chocolate Ice Cream recipes this year.

Our version has all the richness you’ll need but about 90 fewer calories than store-bought premium ice cream and a whopping 15 grams less total fat and 10 grams less saturated fat per serving.
How we made it healthy:

* Used nonfat sweetened condensed milk and low-fat milk in place of heavy cream and whole milk
* Eliminated 2 egg yolks
* Added gelatin to keep it rich and creamy without adding extra fat

Stir it Up!

I like to jazz up homemade ice cream with “stir-ins” like crumbled cookies, toasted nuts or chopped fruit. In Vermont the strawberries are gigantic and juicy, raspberries are just ripe and sour cherries are ready—perfect in this homemade dessert. We developed some easy recipes for stir-ins like Blueberry-Cinnamon Swirl Ice Cream, Chocolate Cookie & Walnut Crunch Ice Cream, Toasted Coconut & Almond Ice Cream and Cherry and White Chocolate Chunk Ice Cream. (Be sure to check out our stir-in tips before you get started.)

Even if you don’t have an ice cream maker, use these stir-in ideas as toppings with your favorite store-bought vanilla or chocolate ice cream. Measurements are for 1 quart of ice cream:

Cherry & White Chocolate Chunk
1/2 cup fresh or frozen chopped cherries & 1/2 cup white chocolate chunks

Toasted Coconut & Almond
1/2 cup toasted coconut flakes & 1/2 cup chopped toasted almonds (see Tip)

Strawberry-Chocolate
3/4 cup fresh or frozen chopped strawberries & 1/4 cup cocoa nibs or mini chocolate chips

Chocolate Cookie & Walnut Crunch
3/4 cup chopped chocolate sandwich (or wafer) cookies & 1/4 cup chopped toasted walnuts (see Tip)

Tip: Toasting chopped nuts: Cook in a small dry skillet over medium-low heat, stirring constantly, until fragrant and lightly browned, 2 to 4 minutes. Cool toasted nuts completely before adding them to the ice cream maker.

Homemade Vanilla Ice Cream

Makes 8 servings, 1/2 cup each (1 quart)
Ingredients

1 ½ teaspoons unflavored gelatin
1 tablespoon water
3 cups low-fat milk, divided
3 large egg yolks
1 14-ounce can nonfat sweetened condensed milk
1 vanilla bean

1. Sprinkle gelatin over water in a small bowl; let stand, stirring once or twice, while you make the base for the ice cream.
2. Pour 1 1/2 cups milk into a large saucepan. Cut vanilla bean in half lengthwise; scrape the seeds into the milk and add the pod.
3. Heat the milk mixture over medium heat until steaming. Whisk egg yolks and condensed milk in a medium bowl. Gradually pour in the hot milk, whisking until blended. Return the mixture to the pan and cook over medium heat, stirring with a wooden spoon, until the back of the spoon is lightly coated, 3 to 5 minutes. Do not bring to a boil or the custard will curdle.
4. Strain the custard through a fine-mesh sieve into a clean large bowl. Add the softened gelatin and whisk until melted. Whisk in the remaining 1 1/2 cups milk. Cover and refrigerate until chilled, at least 2 hours.
5. Whisk the ice cream mixture and pour into the canister of an ice cream maker. Freeze according to manufacturer’s directions. If necessary, place the ice cream in the freezer to firm up before serving.

Use farina (Cream of Wheat) instead of corn meal. It’s round and rolls better. Also, it’s wheat, just like the crust. It blends in. Pre heat the stone in your oven to 550 degrees f. Cook pizza for 12 minutes. You’ll be happy.

Easy Whole-Wheat Pizza Dough

Makes 4-6 servings (1 pound pizza dough)
Ingredients

¾ cup plus 2 tablespoons lukewarm water (105-115°F)
1 package active dry yeast (2 ¼ teaspoons)
1 teaspoon sugar
½ teaspoon salt
1 cup whole-wheat flour
1 cup bread flour or all-purpose flour, plus additional for dusting
2 tablespoons yellow cornmeal

1. Stir water, yeast, sugar and salt in a large bowl; let stand until the yeast has dissolved, about 5 minutes. Stir in whole-wheat flour, bread flour (or all-purpose flour) and cornmeal until the dough begins to come together.
2. Turn the dough out onto a lightly floured work surface. Knead until smooth and elastic, about 10 minutes. (Alternatively, mix the dough in a food processor. Process until it forms a ball, then process for 1 minute to knead.)
3. Place the dough in an oiled bowl and turn to coat. (To make individual pizzas, see Variation.) Cover with a clean kitchen towel and set aside in a warm, draft-free place until doubled in size, about 1 hour.

Individual variation:
The dough can be turned into 4 or 6 personal-size pizzas. After kneading, divide the dough into 4 or 6 equal balls. Brush with oil and place 3 inches apart on a baking sheet. Cover and set aside until doubled in size, about 1 hour. Roll each portion into a 6-to-8-inch circle.

Prepare through Step 3, cover the bowl with plastic wrap and refrigerate for up to 1 day. Or tightly wrap the unrisen dough in oiled plastic wrap and freeze for up to 3 months.
