As I went out to let the chickens out this morning, and came back via the garden, I picked a few yellow squash and a some zucchini - Just had to try making the chips...
They were finished about 6:30 tonight - By 6:45 they were all gone! 10 trays worth. Salsa and a jalapeño cheese dip - We won’t have a surplus of squash again! Set my mandolin cutter about a 16th of an inch and took them out of the dehydrator when they were turning a nice light tan color and were fully crisp... Fantastic. No more potato chips... Christi ran out and brought more in, and they are drying now (says she wants them for breakfast). So, don’t suppose squash chips and a homemade salsa of tomato, pepper, onion and celery could be bad for you at breakfast, so I am going to let her have it.

Sounds like a Denver Omelet to me.
Served a million of them over the years, as an open face sandwich on toast with french fries and a salad, talk about good.
Why not mash some beans or lentils, put lots of salsa, fresh onions, cilantro if you have it...and cheese, a dab of that on the different colored chips, would make a pretty tray, and offer more protein.
My mothers favorite Sunday brunch was, scrambled eggs with cheese and green chilies in them, refried beans and lots of hot buttered cornbread.
Spanish rice of course.
So, yes, I eat vegetables for breakfast.
The dried chips and salsa sound yummy. I think I will try those later this summer. I often will eat food for breakfast that isn’t considered breakfast food. One of my favorites is leftover pasta salad.
I did find a Food Saver unit with canisters, bags, and some other stuff for a good deal a couple of weeks ago. Figure I will use that for some of my dried stuff.
