Morgan Maile’s Marvelous Mushrooms

Ingredients:
16 large mushrooms
1/2 cup butter
10 oz cream cheese
1/2 cup sour cream
1 cup Parmesan cheese
1/4 cup sherry
juice of 1/2 fresh lemon
1 sprig chopped parsley
salt
pepper

Instructions:
Soften cream cheese at room temperature. Wash and dry mushrooms. Cut
off stems, but keep caps whole. Chop stems and saute with 1/4 butter,
and season. Put stems in large bowl with cream cheese, sour cream,
Parmesan cheese, sherry, lemon juice, and parsely. Mix well. Saute
mushroom caps until brown in remaining butter. Stuff with mixture, and
brown under broiler.

Mushroom-Nut Salad

Ingredients:
1/2 lb fresh mushrooms, sliced
3/4 cup olive or salad oil
1/2 cup wine vinegar
2 Tbsp water
3/4 tsp salt
1/4 tsp onion powder
1 small head romaine lettuce, torn into bite-size chunks
3/4 cup toasted filberts, chopped (or walnuts or pecans)
3/4 tsp savory
1/8 tsp pepper

Instructions:
Combine mushrooms, oil, vinegar, water and seasonings in a bowl. Chill
about 1 hour.

To toast filberts, spread nuts in shallow pan and bake in 400F oven for
10-15 min, stirring occasionally.

Toss undrained mushrooms with lettuce and filberts in salad bowl.
6-8 servings

Mushrooms Polonaise

Ingredients:
1 1/2 lb mushrooms, sliced
1 onion, chopped
3/4 cup butter
2 Tbsp flour
1 cup sour cream
1 cup heavy cream
1/2 tsp nutmeg
pepper
1/2 cup parsley, chopped
1/4 cup bread crumbs

Instructions:
Preheat oven to 350F.

Place mushrooms and onion in a heavy, _dry_ skillet. Cover, and over
very low heat, allow vegetables to cook in their own juices until they
almost stick to the pan. Add 1/2 c butter. When butter has melted, add
flour and cook, stirring constantly, for 5 minutes over very low heat.
Stir in sour cream and heavy cream with a wooden spoon, then add nutmeg
and pepper to taste. Continue to cook, uncovered until mixture has
thickened. Stir in parsley.

In another pan, lightly saute bread crumbs in 1/4 c butter. Pour
mushroom mixture into a buttered shallow casserole. Sprinkle top with
sauteed bread crumbs. Bake until mixture has set and bread crumbs have
browned a little more. 6 servings

Administrator Fugate And Gen McKinley Meet To Discuss Partnership And Preparedness

WASHINGTON, D.C. — The Department of Homeland Security’s Federal Emergency Management Agency (FEMA) Administrator W. Craig Fugate met today with the Chief, National Guard Bureau, Gen. Craig R. McKinley, to discuss working together on issues of partnership and preparedness as the 2009 hurricane season approaches.

The meeting was a helpful exchange of ideas, lessons learned and best practices as the two organizations work to synchronize efforts on behalf of the American public. In the coming weeks Fugate will hold similar meetings with local, state, tribal and federal officials to build relationships and increase the nation’s focus on preparedness.

“In one of my first actions as FEMA Administrator, I was happy to meet with Gen. McKinley and the National Guard,” Fugate said. “In the event of a disaster, the National Guard represents our nation’s immediate responders, and its important for FEMA to not only hear first hand their needs but for us to continue this important working relationship. During my nomination hearing, I said that I would improve FEMA’s partnership with state and local governments, and I also promised that I would call for the Agency to focus on preparedness and a coordinated response from the federal government for the next disaster. Today’s meeting was an important step toward that end.”

“The National Guard’s number one priority is the security and defense of our homeland, at home and abroad,” added McKinley. “It is a natural and essential relationship for the National Guard and FEMA to work hand-in-hand to help protect America.”

The best and most effective response occurs when every level of government works together in a unified and coordinated way. Disasters may start and end at the local level, but we all have an important and often critical role to play in a coordinated emergency management response and the effectiveness of that response ultimately depends on teamwork. History teaches that a lack of hurricane awareness and preparation are common threads among all major hurricane disasters. By knowing your vulnerability and what actions you should take, you can reduce the effects of a hurricane disaster. June 1 marks the beginning of the 2009 hurricane season.

Emergency preparedness is everyone’s responsibility. Everyone should have a personal response plan for a disaster, everyone should know who their first responders are at the local and state level, and everyone should be prepared to be self-sufficient for at least the first 72 hours.

FEMA leads and supports the nation in a risk-based, comprehensive emergency management system of preparedness, protection, response, recovery, and mitigation, to reduce the loss of life and property and protect the nation from all hazards including natural disasters, acts of terrorism, and other man-made disasters.

The President’s Food Safety Working Group (http://www.foodsafetyworkinggroup.gov/Home.htm) was recently launched with a listening session. President Obama has charged the Food Safety Working Group with examining all aspects of food safety, be it meat or produce, fresh or frozen, whether it is imported, or produced domestically. The Food Safety Working Group is interested in hearing from a broad range of stakeholders in a variety of ways about their ideas for improving the food safety system. The White House Listening Session was an opportunity to engage stakeholders in a conversation to help shape these principles.

Funding Opportunities

EQIP Organic Initiative

USDA has announced $50 Million for a new initiative to meet the Obama Administration’s promise to encourage more organic agriculture production. Funding for the initiative is being made available as part of the Environmental Quality Incentives Program (EQIP). Organic producers may also apply for assistance under general EQIP. Under the Organic Initiative required minimum core conservation practices will be determined by specific resource concerns. The practices are: Conservation Crop Rotation; Cover Crop; Nutrient Management; Pest Management; Prescribed Grazing; and Forage Harvest Management. States must consider using any appropriate practice that meets the resource concern on a particular operation. Applications received from organic producers or producers in transition to organic farming will be accepted under this initiative between May 11 and May 29. The 2009 Organic Initiative will be administered by the Natural Resources Conservation Service. Interested producers should visit their nearest USDA Service Center to determine eligibility.
Proposals are due May 29, 2009.

Utah Conservation Innovation Aquaculture Grant

NRCS requests applications for Conservation Innovation Grants (CIG) to stimulate the development and adoption of innovative conservation approaches and technologies to aquaculture in Utah. The purpose of CIG is to stimulate the development and adoption of innovative conservation approaches and technologies while leveraging the Federal investment in environmental enhancement and protection, in conjunction with agricultural production. CIG funds projects targeting innovative ‘on-the-ground’ conservation, including pilot projects and field demonstrations. Applications are accepted for aquaculture projects throughout the State of Utah.
Proposals are due June 17, 2009.

Rural Cooperative Development Grant Program

NEW YORK – The FBI arrested four men Wednesday in what authorities called a plot to detonate a bomb outside a Jewish temple and to shoot military planes with guided missiles.

Officials told The Associated Press the arrests came after a long-running undercover operation that began in Newburgh, N.Y., about 70 miles north of New York City.

James Cromitie, David Williams, Onta Williams and Laguerre Payen, all of Newburgh, were charged with conspiracy to use weapons of mass destruction within the United States and conspiracy to acquire and use anti-aircraft missiles, the U.S. attorney’s office said.

Why, when we are said to have the best health and care??

Last night for a short time I listened to the Las Vegas Police Scanner, the Emergency Medical crews were picking up folks with “stomach pains”, and when they advised the hospital that they would be arriving in 5 minutes, were told “You are aware that I do not have a bed for you? “ “Come on in, when I can, I will find a bed for your patient!!!”

I heard a couple refused and sent to other medical clinics.

I have heard other nights when they Medical teams were hauling lots of patients, but have never heard that the beds were full or to divert to other hospitals, unless it was for a special need that they did not have anyone on duty to fill.

Looks like the pandemic has not hit us as yet...

FOR IMMEDIATE RELEASE — May 20, 2009, Rio Pluma LLC, A division of Stapleton Spence Packing Company located at 1900 Hwy 99, Gridley, CA. 95948 is reissuing its recall of various peanut products to clarify affected codes.

The product has the potential to be contaminated with Salmonella, an organism which can cause serious and sometimes fatal infections in young children, frail or elderly people, and others with weakened immune systems. Healthy persons infected with Salmonella often experience fever, diarrhea (which may be bloody), nausea, vomiting and abdominal pain. In rare circumstances, infection with Salmonella can result in the organism getting into the bloodstream and producing more severe illnesses such as arterial infections (i.e., infected aneurysms), endocarditis and arthritis.

Recalled products were sold only in case quantities as indicated below and they were distributed to the Food Service industry in California, Oregon, Washington, Hawaii, and Idaho. All applicable UPC codes are provided as listed below. Lot numbers of the products listed are located on each package and/or case and include 07001 through 09056. Lot numbers are formatted with the first two numbers being the year (07 for 2007, 09 for 2009). The remaining three numbers are the Julian date (day of the year).

No illnesses have been reported to date. Rio Pluma discontinued distribution of these products in response to a nationwide recall by Peanut Corporation of America of products from its processing facilities. People who have severe sensitivity to sulfites run the risk of serious or life-threatening reactions if they consume this product.

FOR IMMEDIATE RELEASE — Franklin, Tennessee (May 21, 2009) — Today, Nutro Products announced a voluntary recall of select varieties of NUTRO® NATURAL CHOICE® COMPLETE CARE® Dry Cat Foods and NUTRO® MAX® Cat Dry Foods with “Best If Used By Dates” between May 12, 2010 and August 22, 2010. The cat food is being voluntarily recalled in the United States and ten additional countries. This recall is due to incorrect levels of zinc and potassium in our finished product resulting from a production error by a US-based premix supplier.

Two mineral premixes were affected. One premix contained excessive levels of zinc and under-supplemented potassium. The second premix under-supplemented potassium. Both zinc and potassium are essential nutrients for cats and are added as nutritional supplements to NUTRO® dry cat food.

This issue was identified during an audit of our documentation from the supplier. An extensive review confirmed that only these two premixes were affected. This recall does not affect any NUTRO® dog food products, wet dog or cat food, or dog and cat treats.

Affected product was distributed to retail customers in all 50 states, as well as to customers in Canada, Mexico, Japan, Korea, Thailand, Malaysia, Singapore, Indonesia, New Zealand, and Israel. We are working with all of our distributors and retail customers, in both the US and internationally, to ensure that the recalled products are not on store shelves. These products should not be sold or distributed further.

Consumers who have purchased affected product should immediately discontinue feeding the product to their cats, and switch to another product with a balanced nutritional profile. While we have received no consumer complaints related to this issue, cat owners should monitor their cat for symptoms, including a reduction in appetite or refusal of food, weight loss, vomiting or diarrhea. If your cat is experiencing health issues or is pregnant, please contact your veterinarian.

TORONTO - A newly disclosed Canadian intelligence study says al-Qaeda might try to spread the deadly avian flu virus as part of its campaign to sow terror in Western nations.

The report by the federal government’s Integrated Threat Assessment Centre describes the avian flu as a “potential terrorist-induced” pandemic and specifically mentions Osama bin Laden.

“It is significant to note that Osama bin Laden views chemical, biological, radiological and nuclear weapons as legitimate,” says the report, titled “Pandemics: Avian Flu.”

“In addition, Osama bin Laden and al-Qaeda representatives have repeatedly named Canada as a target,” it says under the heading “Biology and Terrorism.”

A copy of the study was released to the National Post under the Access to Information Act.

Security officials have long feared that Islamic terrorists bent on disrupting Western economies and killing masses of civilians might resort to biological agents.

Terrorists have shown increasing interest in biological and chemical weapons since the Japanese religious sect Aum Shinri Kyo attacked the Tokyo subway system with sarin in 1995.

Al-Qaeda experimented with such weapons at its camps in Afghanistan, but there have been few attempts so far to use them, partly because they are difficult to manufacture and disseminate.

But the Canadian report says last winter’s outbreak of the H5N1 strain of avian flu in Asia “is of concern due to its high mortality rate in humans” and warns of “worldwide pandemic.”

Aside from terrorists, the report warns of the possibility that smugglers could unwittingly bring the virus to Canada. It cites the example of a Thai man who tried to smuggle two infected birds into Belgium last October.

The crested hawk eagles were concealed in plastic tubes in his carry-on baggage. The veterinarian who handled the birds was hospitalized with symptoms of avian flu but survived.
