I haven’t really cooked greens before - I know its more of a southern thing, but I guess I’ll try it. My grandma used to make spinach, but used the frozen (they didn’t have a garden, lived in the city) and she would saute some chopped onions, maybe garlic and add the spinach. Then she would add an egg or two and scramble it in. That’s how I grew up eating it and love it that way.

Oh boy have you been missing a treat...

Maybe turnip greens, mustard greens, or kale. I like mine cooked with some ham pieces or salt pork - If I don’t have either, bacon will do (smoked). Just a bit of salt and pepper is all you need. I then top it off on my plate with a bit of either malt vinegar or cider vinegar.

Have some good pinto beans on the side, some fried potatoes and a nice pork steak - I am in heaven!!!

Yeah, I grew up having the same kind of spinach we had sliced hardboiled eggs on ours - good but not the best! IMO

You can hide anything in eggs.

My sister in law, hid vegetables that way, as the kids ate them and didn’t fuss.

I was there and saw her fixing eggs with green beans in them and had to ask.

If your greens are fresh, just steam them a few minutes until the wilt and go limp, then serve with butter and try lemon juice.

I like ranch dressing from the Safeway’s own store label on any green cooked or raw.

In a catering class I took, they sliced the Zucchini squash thin, browned it and a little onion and then poured beaten eggs over it and scrambled them, that was gourmet food
in 1955.

LOL, I put whole corn in my pancake batter, with a little vanilla and then treat them as regular pancakes....I was doing it 30 years before I saw a recipe for it.

When I quit laughing at the women’s magazine that had the recipe, I called my nephew, who for 25 years had kinda fussed at eating pancakes with corn in them.

I like crumbled bacon in my pancake batter, with the corn or without.

Started that, as I never got to eat bacon, we had one who was able to eat all that was cooked, so I put it in the batter.

LOL, and honey and cinnamon is good on pancakes, so is peanut butter.

Hmmm... well, the way I like my greens is to wash 'em good. Takes several washings sometimes. Then I put them in a pan with salt pork, ham or bacon. If I don't have meat I use about a half a stick of butter. Cook 'em on low heat so they'll steam in their own juices, add salt and pepper to taste and a little lemon juice or cider vinegar.

Oh, an if I'm using turnip greens plain or in a mix with other greens I dice up a turnip in there to cook with the greens. Add a little more vinegar when there's a turnip or two in the pot. and maybe some extra butter. MMMmmmm...
