I totally love potatoes but they are restricted on the kidney disease diet. Too much potassium. You’re supposed to soak them in water for a couple of hours first but that leaches out all the vitamins. I do miss them. :(

Well, if it helps you are not alone! I never thought I'd have to do without potatoes! Even as a kid I would often tell folks a potato was my favorite food. Not cake, not ice cream. You can probably tell I was a chubby kid though.

I found a recipe using cauliflower as a substitute for garlic mashed potatoes. It was good but it didn't substitute. There is also a restaurant in Waco that serves one of those Adkins diet menus that will make a stuffed baked potato using cauliflower instead of potatoes.

IMO - cauliflower is cauliflower and while I like it very much, it does not sub for my taters.
