FIRST Grease a round layer cake pan. Center in pan, empty condensed milk can wrapped w/ saran.
Melt on low heat 12 oz package white/chocolate/chips, cup white/chocolate/chips, 14 oz can sweetened condensed milk, tea vanilla.
When melted, add 1-1 1/2 c unsalted pistachios, 1/2 c dried sweetened cranberries, stir well (will stick and burn if not stirred constantly).
Pour into greased pan around can. Top will be bumpy.
Decorate in Christmas holly shapes w/ candied red/green cherries halves. Or use candies like red and green MnM's. Cool/set in refridge.
TO GIVE AS GIFT Liftout of pan. Place in cellophane bag and tie with bow.
VARIATIONS Can also use semi-sweet, milk chocolate, peanut butter, or butterscotch chips.
Excellent. Thanks so much. Here’s a recipe that’s been floating around Virginia for a while (I heard about it from my mother — she used to work with Quita, the lady who submitted it).
Roxies Sweet Potato Something
For casserole:
3 cups mashed sweet potatoes (or 2 large cans of yams, mashed)
3/4 cup sugar
2 eggs, well beaten
1/2 cup milk
1 stick melted butter
2 tsp. vanilla
For topping:
1 cup brown sugar
1/2 cup milk
1/2 cup melted butter
1/2 cup flour
1 cup chopped pecans
Preheat oven to 350 degrees.
Combine all casserole ingredients and spread into a greased casserole dish. Combine topping ingredients and spread over top of the potatoes. Bake for 30 to 40 minutes or until top is browned.
This dish can be prepared ahead of time and refrigerated for 2 to 3 days.
