Excellent. Thanks so much. Here’s a recipe that’s been floating around Virginia for a while (I heard about it from my mother — she used to work with Quita, the lady who submitted it).
Roxies Sweet Potato Something
For casserole:
3 cups mashed sweet potatoes (or 2 large cans of yams, mashed)
3/4 cup sugar
2 eggs, well beaten
1/2 cup milk
1 stick melted butter
2 tsp. vanilla
For topping:
1 cup brown sugar
1/2 cup milk
1/2 cup melted butter
1/2 cup flour
1 cup chopped pecans
Preheat oven to 350 degrees.
Combine all casserole ingredients and spread into a greased casserole dish. Combine topping ingredients and spread over top of the potatoes. Bake for 30 to 40 minutes or until top is browned.
This dish can be prepared ahead of time and refrigerated for 2 to 3 days.

Cousin Sara’s Tortilla Roll-Ups
2 (8oz.) pkg. cream cheese
1 (7oz.) can green chilies, drained
1 sm. can chopped black olives
2 (2.5oz.) pkg. corned beef or pastrami, shredded
1 c. shredded cheddar cheese
Mix all ingredients together with mixer. Use 8 to 10 tortillas (10” size) and spread mix on them, roll up, wrap each in foil, and refrigerate. Cut into one inch slices, serve with salsa.
