JC, I have made this pineapple upside down cake for over 35 years - it is so easy!

Easy Pineapple-Upside Down Cake

1/2 c. butter (1 stick)
1 c. brown sugar
1 1 lb.14oz. can pineapple slices (I have used crushed, too)
Marischino cherry halves
1 pkg. cake mix (yellow, butter cake or pineapple flavor)

Melt butter in 13 X 9 pan. Sprinkle brown sugar evenly in pan. Drin Pineapple, save syrup. Arrange pineapple and cherries (rounded side down), on sugar mixture.

Add enough water to pineapple syrup to make 1 1/3 c. liquid. (Or as much liquid as called for on the box.) Prepare cake mix according to package directions, and pour over fruit.

Bake at 350 for about 50 - 60 minutes, or until cake pulls away from side of pan. Let stand for 5 minutes to let topping set. Turn upside down on platter (or foil covered cookie sheet.)

Yeild - up to 20, depending on size cut, and if there are any greedy people taking four or five peices on their plate.

This sounds good and easy..I would probably be one of those
greedy people to watch out for.

Yorkie, that is my recipe, except I use both crushed pineapple and sliced pineapple. Everything else the same. They almost fought over it at church. I brought a couple of pieces home. I have had the recipe for a long time. The used to be neighbor that I visited recently, is the one who gave it to me. I agree it is the best!
