It would be easier to make them now when we don’t have so much Thanksgiving cooking to do.

My DIL made one of those Kentucky Derby Pies for our 4th of July cookout (they’re like pecan pies and I don’t know what the difference is). Hers tasted like it might have some chocolate in it...I’ll ask her sometimes.

JC - Kentucky Derby pie is almost identical to pecan pie, but chocolate chips are added. (Some cooks use walnuts - but pecans are the best, IMHO.)

Kentucky Derby Pie

Ingredients:
1 cup Sugar
1 cup Light corn syrup
4 Eggs
1/2 cup butter — melted
1 cup Chopped pecans or walnuts
1 cup Chocolate chips
1 teaspoon Vanilla
2 tablespoons Bourbon (opt.)

Directions:
Preheat oven to 350 F.

Combine sugar, corn syrup and eggs in mixing bowl. Beat at low speed until well blended. Stir in remaining ingredients and pour into a 9” unbaked pie shell. Bake 45-50 minutes or until set.

Serve with whipped cream, if desired.
