JC - Kentucky Derby pie is almost identical to pecan pie, but chocolate chips are added. (Some cooks use walnuts - but pecans are the best, IMHO.)

Kentucky Derby Pie

Ingredients:
1 cup Sugar
1 cup Light corn syrup
4 Eggs
1/2 cup butter — melted
1 cup Chopped pecans or walnuts
1 cup Chocolate chips
1 teaspoon Vanilla
2 tablespoons Bourbon (opt.)

Directions:
Preheat oven to 350 F.

Combine sugar, corn syrup and eggs in mixing bowl. Beat at low speed until well blended. Stir in remaining ingredients and pour into a 9” unbaked pie shell. Bake 45-50 minutes or until set.

Serve with whipped cream, if desired.

Mercy!..more calories than I usually eat in a day..but it is divine pie..Pecans are best indeed.. I like walnuts in my Apple Blossom cake but pecans are my favorite in most things.
