My #355 was OK, then out for a couple of hours and now it's back. However, Amy's #368 (not 355) is still out with a red X. Meanwhile, yorkie, your moose did a neat job at parking.

In some of the stores here on Maui they have what they call Hawaiian style Macaroni salad. It's got just about all you mentioned but is half potato salad and half macaroni. Believe it or not it is good and pretty popular too.

Hmmmm. Potatoes and macaroni together? Sounds different, but interesting. I looked it up, and here is what I found:
Potato Macaroni Salad
This double-carb dish sounded strange to me when I first saw it on the menu of a plate lunch cafe in Hawaii, but it has grown on me, and now it is one of my favorites.
Salad Ingredients:
5 large potatoes
1 cup shell macaroni-dry
2 carrots, shredded
2 stalks of celery, finely chopped
2 green onions, finely chopped
3 hard boiled eggs, coarsely chopped
3 sweet pickles, coarsely chopped
1 cup frozen peas, lightly cooked
Salt and pepper to taste
Dressing Ingredients:
1-1/4 cup mayonnaise
1/2 cup Italian dressing
2 tablespoon of pickle juice
1 teaspoon of mustard
A bit of dill weed (optional)
Instructions:
Cook potatoes the night before, drain thoroughly, and chill in the refrigerator overnight. The next day, cut the potatos into cubes (don’t do it when they are still warm, or they will crumble). Cook the macaroni according to the package directions, and rinse it in cold water to cool it and prevent it from sticking together. Drain thoroughly to remove all the water. Mix the dressing in a small bowl and set aside. Gently mix the potatoes and macaroni with the remaining ingredients, and stir in the dressing.

That is almost the recipe I use but I leave out the dressings and use mayo only with just a touch of mustard. Then I use a trick I learned from my father (a chef) I put in about a tablespoon of vinegar. It gives it that taste that people say, ‘you did something different here but I can’t tell what it is.’ LOL

Macaroni Salad sounds wonderful. I very seldom make it; I usually make potato salad. I may get brave and try some of the MacaroniPotato salad.
In my potato salad, I do not use a dressing. I use mayo and mustard. I add chopped or sliced olives. I’ve never added vinegar. I need to give that a try.
I checked 123greeting cards and they listed Macaroni Day
and Strawberry Sundae Day in addition to Chocolate Day.

Be really careful on the vinegar. It's one of those things, like salt, that if you get just a tad too much, it will ruin the dish. Go slowly by taste. I use the cap of the bottle of vinegar for measure and if making a bigger salad I use a couple of caps full.

Just a note to report I’m alive. Weekend was tremendously busy and remembered today that I was behind on my bookwork, writing checks, etc. so I did that today. Tomorrow I have to take my SIL for her cataract surgery on her second eye. Then I will have to take her back on Wednesday.
I did get on last night and look at all the beautiful things posted on Saturday and Sunday. There were some beautiful graphics and lovely sentiments. I did make it to church yesterday. Hope I will get caught up soon!
Our 4th of July evening was a lot of fun at my son’s. Delicious food and his fireworks are the best. Truly had a good time!
Miss ya’ll but I will catch up soon!
