I think just about any vegetable is good roasted! I just set the oven to somewhere around 400 degrees, toss the vegetables in olive oil, garlic, a bit of salt and pepper, and whatever other spices seem good (tonight I used lemon juice, too), put them in a baking pan, and then stick ‘em in the oven for 20 minutes or so, until they’re just starting to brown a bit around the edges. Works well with asparagus, cauliflower, sweet potato slices...whatever.
Cauliflower has the virtue of being cheap, though. And I had some Parmesan to toss on top when it was done. Very tasty.

We had lunch at a local Chinese place today; buffet, $8.95 MMMM. Anyway, they had tempura, but it must have been dipped in Panko crumbs. It was vey good! I’m going to give it a try.

Panko crumbs are Japanese bread crumbs, and they are much more coarse than the typical bread crumbs. They make for a really crunchy coating, and from something I read online tonight, don't absorb as much oil as regular bread crumbs when you're frying foods with it. You can probably find them at the grocery store in the Asian foods section, or maybe they're with the other bread crumbs.
Alton Brown prepared some broccoli on one of his shows, and did basically what you did to roast veggies, but before he put them in the oven, he put some panko crumbs in a pan and lightly browned them, then tossed the broccoli in them, and baked the coated broccoli. It looked dee-lish, so I'm gonna give that recipe a try, too!

Nana was admitted to the hospital last night. She’d been sick all weekend (they initially thought flu then ruled that out). She’s severely dehydrated. When we saw her last night she did ~not~ look good.
Mrs. left there about 3:00 a.m. and after the IV Nana was doing a little better.
Mrs. is traveling to a meeting. She’ll get there late and I tried to convince her not to go at all. But she don’t listen to me.
We await the news on Jr’s car...

Good morning! I got a shift already for this evening...working for my agency, which means I work today and get paid tomorrow.
It’s a cushy 3-11 shift, not an all-nighter. Private duty sitter in the hospital.
