Fresh install of RHEL2.1 takes exactly one reboot to bring completely up2date... how many does 2000 server take? If the O/S install media included SP4, like they all do now, only 1 as well. But if I'm a couple of months behind on patches, it only takes about 15 minutes to get up to date, while I personally witnessed this Red Hat box take 6 hours.
