Ok...I learned that frying the tacos in a bunch of butter doesn't work...the butter scorches. So I make the tacos into little packets held together with a toothpick, coat both sides with a thin layer of butter then fry them briefly just to turn them a bit brown. (I don't worry about cooking the inside, he'll do that when he nukes 'em.) Put them on a cooling rack then put three per baggie.
I made 12 of them and they are in the freezer!
I also made Matthew a cheese taco and a scrambled egg and cheddar cheese taco for Joshua!
You should make them with all sorts of fillings and not tell him what's in what, then he'd have a surprise every lunch.
I should do something like that. Wonder how well they'll heat up? You'll have to report back...
