Hi all... not caught up yet anywhere, just happy to have internet again! Our cable modem gave out, and we had to have a service tech come out with a new one.
I was internetless all day! Just about made me crazy!
It's frozen pizza night. It's from Aldis...pretty good frozen pizza. Pepperoni and sausage.

Got about 5 inches. Just finished "playing in the snow."
Ha ha! I love snow. 'Specially when I don't have to go anywhere in it...being from south of Houston, it's still a little daunting for me to drive in and I avoid it if at all possible.
WHOA BABY!! Apparently my new bulk yeast I bought at Sams was potent stuff! LOL!! I used the same amount I always use but my loaf in the bread machine is gigantic!!
If it doesn't collapse, I'll be lucky. I gotta adjust the amount! LOL
The yeast I had been using was pretty old. We're talking years in the fridge. It comes as two 1-pound vacuum-packed containers! Takes a while to use up.
I'm slightly unnerved! It's almost bumping the lid of the machine and it starts baking in about 15 minutes...and you know it's gonna rise some more! It's hugh!!
I told Matthew it was like "The Blob" and started acting out the bread attacking me from behind.
He thought that was pretty funny...
So....no more Atkins?
No, not for me. I tried to stay on it when I went low fat, but just couldn't.
Steve eats a bit more carbs than he should probably, but has been maintaining his target weight.
The boys love this bread, though...fresh baked, it makes the house smell good and they eat it almost like cake!
MMmmm.......cake.....
It starts baking in about 10 minutes and it's really too big for the baker.
I'm gonna punch it down and let it rise again in the oven, then just bake it in the oven...
It's at least whole wheat bread, right?
Evening OT - just got home from voting and catching up. Got home the regular time but left an hour early. 2 hours for 23 miles. But no matter now. Nice to get a snow without several hours of sleet preceding it. Sounds like it is about over.
Hope it's about over...I shoveled the driveway.
No...not whole wheat...not this recipe. LOL I think it's what Suzi's son calls "Craptacular".

Here's the recipe.
Craptacular Bread
2 tbsp canola oil
1 c plus a dab more of warm milk
At least 1 tsp of instant yeast, maybe 2 if it's old yeast.
1 pound of all-purpose flour
2 tbsp sugar
1 tsp salt
Punching it down and putting it in the oven was the thing to do...it's already rising beautifully...

How you feeling? I've wondered about you a lot since your little detour off the main road!
Feeling fine... physically, anyway. Have been exercising even, and eating better.
Still feeling pretty crummy about messing up the Jeep. Of any of the vehicles to mess up, that was the one that didn't need replacing. [sigh]
I'm in the midst of annual reviews now. Yippee freakin' skippee. It's the worstest time of the year.
I'm sorry to hear about that...is it just irreplaceable?
