I'm not much of a knife person, although an AG Russell (which I think is not a great knife) with a 3" blade lives in my pocket. I like it because, even folded, it is so slim that I hardly know it's there.
Favorite knife is my Forschner Victorinox filet knife with 8" curved blade, it can really cut up some fish, easy to sharpen, holds its edge, great piece of equipment, IMO.

Nice looking filet knife, I got a wood handled rapala. Found it on the shore of the Lake of the Ozarks when working on a road and bridge study. That was a heck of a souvenir of the trip. Cleaned up slick and very handy on the rare occasion when a fish decides to bit my lure out of sheer frustration.
Now, where the heck did we put the rest of those boxes. sigh.
Forschner/Victorinox makes some great kitchen knives, or a filet knife, which is like a kitchen knife used out in the field. I'm not an expert in kitchen knives, but after watching the Food Network, there are obviously a lot of chefs that are knife-happy, and will pay more for a kitchen knife than any GI would for a combat knife.
AG Russell has some nice knives made under his name. I've never had a bad deal with him, although sometimes his sale prices can be beaten elsewhere. His company also has enough sales clout to get some very desireable exclusive variations made for him.
I tend to be very conservative in what I carry, in that I don't change pocket knives unless something far better comes along. That's why I have that little, cheap, innovative Kershaw knife/scissors on my keychain. If I have to produce a inoffensive knife in public, that's what I use.
My other pocket knife does not come out of my pocket except in the most dire circumstances. It's a Spyderco folding karambit, and its tiny 1-7/8 inch blade is intended soley for deep slashing and quick removal of internal organs.
