But they also can't agree amongst themselves what exactly it means...beef, pork, what kinda sauce...

The word "barbecue" used by itself means pork. If it's any other type of varmint "barbecued" is a qualifier as in "barbecued chicken." Sauces? There are two: Eastern and Western.

And "eastern" and "western" do not refer to the coasts, but to portions of South Carolina, is that correct?

I just don't get this.
