Ground beef. I brown it and chop it up pretty fine while I'm doing that. I imagine you could use chicken, too.

Yes, Mondays I have a class, a seminar, and a lab. The lab goes until 7:30 so I have to find alternate means of conveyance.

I have ground beef...just wasn't sure if that's what you were using. Don't have a reliable crockpot, but someday soon I'll have to get one! Not like they're horribly pricey...

Sounds like a nice, quick meal that could be stretched a long way. Once I get a crockpot, I could see having that at least once a week, especially if I was planning to have bothers over...

Yes, I usually make enough for three or four meals. The salsa makes the meat moist enough that it reheats no problem.

Use the low-carb tortillas, and yum!

Regardless of the truth of that remark...considering that's only the second time in all these months that anyone has noticed and/or said anything, it made my day! ;-)

If you invent one, let me know! ;-) I guess as long as I've got a general downward trend, I should be happy...but it's easy to get addicted to checking often and then being dismayed at the results. And I'm fairly close to my goal now, which makes me all the more impatient.

Exactly! Muscle is denser than fat.
Yeah I find it helps to remind myself in the morning. Kinda helps keep snacking in check.

I kinda wanna just wait until I'm really where I want to be before buying anything, but it means feeling like a slob for a bit.

I worked on a computer for someone this morning, and being grateful she was pushing cheese danishes on me. I managed to run away (shrieking internally) with just a free cup of coffee.
