So... do you use vinegar when you make them? Or do you let them ferment? I'm all nervous about letting them perk along at room temperature and am always thrilled to find people who 'do this all the time' at home.

Just heard from Beth.... As you will recall (and for the benefit of everyone else) She's been on furlough status with American since 9-11.
As some of you may know, a new chapter in my life and career starts Monday. I have accepted a job with Atlas Air Cargo flying 747s all over the world. I am excited about the things I will see, the places I will go and flying big airplanes again. It is time to get this thing I call a career back on track and find a long term job to wait the next few years out (like until I am 60).

A few downfalls to the job. I leave Saturday for Miami for 2+ months for training and have yet to find a redeeming quality to Miami other than it's proximity to Key West and Margaritaville. Plus it is still summer in Alaska so my timing is not so good, I hear it is slightly warmer in Miami than Anchorage too. My initial base will be Stanstead, England. While I don't expect to see much of Stanstead really, I also do not expect to see much of Anchorage for awhile and that is hard. Per the Chief Pilot, I can expect to be based back in the U.S. by Spring, (but since it is an airline that means roughly Fall '05). Atlas does have an Anchorage base that I hope to see down the road and be home a little more.

I will keep a residence in Anchorage with a friend. Email may be the best way to connect with me for awhile and I hope to get proficient with international and hotel internet connections (the 747 may prove easier for me to learn so be patient with me.)

I hope all of you are well and enjoying the summer. I will be in touch as things change and I can share my travels with you. Take Care Beth

Well I haven't done them in a while. I use the recipe from "The Joy of Cooking" only I cut back on the salt. You pack the cukes in the jars and add dill seed. Bring a 50:50 v/v water:vinegar plus salt (and garlic if you're doing kosher) to just under a boil. Pour the hot brine into the jars and put the lids on. Then you process them in boiling water for a certain amount of time (Can't remember how long....have to look it up.) Then you pull them out and let them cool. I always liked hearing the tops pop when they get "vaccum sealed."

Rosie, I really like the quote in your tagline--every time I see that it reminds me of a verse in Matthew 6 I need to apply more often, so it's a good quote for me to see :) Where did you find that? I don't know St. Pio.

Interesting, I'll give that recipe a try. I have an old copy of JoC that rarely gets used anymore. It's really, really grimey. (that's a long story but involves many summers working at a scout camp)

He's better known as just Padre Pio. He was recently canonized. That's one of the his better known quotes...I've known it for years...it's a good summary of a lot of aspects of Christian life, IMO!

It looks like someone has gotten over his subtitleophobia. You learn more Japanese that way... I've learned a number of really useless phrases thanks to FMA. Can't really see a need for me to ever ask about the philosopher's stone (kenja no ishi)...

SP is excellent for the honorifics. It uses the most common ones often enough that you should pick up when/why they're used.

She loves Alaska. Has ever since she moved up there after school to fly bush. Her plane and her route was hijacked and hit the second tower on her day off. She knew the crew that was killed. She said afterwards she didn't really want to go back. She and her husband built a cabin in the woods, although I don't see mention of him in this note. I haven't talked to her often enough to feel comfortable asking too many questions right off the bat. I sent her a reply with my update. I am glad she is flying again, she is living the life I was supposed to have :~\

The is a huge list of people who always got beat up in town.

Uh, redshirts usually died. Harrison Ford was the beater, and not the beatee, in "Witness". Actually, that was one of my favorite movie moments, along with Harrison Ford and the dude in black with the big sword in "Raiders of the Lost Ark".
