You know, I guess in a way I sorta have a variation on that low-carb thing. My way of starting was completely different though. My ex-mother-in-law gave me a book about 15 years ago that outlined some dietary causes for symtoms of arthritis. She thought I was way too young to be having so much joint pain and stiffness.
I can't remember the name of the book and don't still have it. But, it outlined some foods which caused joint pain and stiffness due to mild "allergies" to those foods. I really rebelled at the idea because some of them were my absolute *favorite* foods!!! POTATOES!!! NUTS!!!
But, I finally went through a dietary regime of eliminating each food from my diet for one week to see if I noted any improvement. I found out the big thing is potatoes! I love them but if I eat them I am miserable for a couple of days afterward. I also have the same thing happen with wheat - especially whole wheat products. I know, whole wheat is supposed to be better for ya... but that's what causes the *worst* symptoms in me so if I eat it I try and avoid whole grain. Also, milk to a milder degree.
I stopped eating these things slowly over the years because they are so much a part of our American diet. But, the more I eliminated them - the better I felt. Now, I just look at taters and even though I *really* would love to taste them - I remember well how bad I feel later and usually don't touch 'em. If I eat 'em I know I'll pay for a couple of days. Sometimes I do it... but not too often anymore.
I can still eat pasta in moderation. And I eat lots of tortillas but they don't seem to affect me. And after years of being told the joint pain I had was arthritis, when I had lots of x-rays last year to try and find the source of another problem - I was told there is no arthritis at all... but I have some old injuries that just healed wrong and cause intermittent problems.

Possibly, but consider also that our westernized, over-processed diet is quite a bastardization of the real, food food humans have eaten since the beginnings of man. I'm convinced that we've brought many of these conditions on ourselves because of the crazy foods we eat. I think fake foods create un-natural allergies.
Take lactose intolerance. The milk we drink is not the same as what's produced by cows in, say, Peru. Our cows don't get to eat grass. They eat recycled chicken parts, soy, grain, hormones, antibiotics and other crud. We post-process our milk by boiling it, stripping the fat out, and pumping it full of synthetic vitamins. Peoples around the world who use raw, real milk don't have milk allergies. So it's no suprise to me that so many who drink our fake milk do.
The pathetic thing is that most states prohibit the sale of real, raw milk for anything other than pet food. Those who can get it are truly blessed.
That's one of the main things I notice when I limit sugar and white flour. You'd think I'd be smart enough to keep it up, but I guess I've lived with this for so long it just seems normal. But I felt a lot better when I was on that strict diet last year.
Wife keeps pushing South Beach. I'm willing to try. Mainly I just intend to eliminate the sugars and white flours. If I do that, I'll be a lot better off.
Maybe I didn't give Atkins enough time, but it actually caused digestive "issues" for me. Then again, that's been problematic for me since the radiation treatment, and that's been 13 years.
There are places here that sell raw milk...but in order to get around laws, they have to label it as "for animal consumption only". Otherwise they get in trouble.
I've never tried it, though.
Well, yeah, our cows aren't eating right - lots of people think that's why girls are, er, developing earlier - but then there's always pasteurization. That raw milk might have who knows what in it...
I mock the French, but Louis Pasteur should be a saint or something.
My nails aren't cooperating, but my hair looks great. It has a natural shine and more body. I attribute it to increasing my use of animal fats instead of vegetable oils.

I've just talked to SO many people that have noticed these same things...and the thing is, they are mostly all completely surprised! Like they didn't realize the improvement would happen (like me and Steve) or they really didn't believe it would happen.
I really didn't even think about it. I went on Atkins because Steve was on it and I thought "Ok, I'll loose this slight pudginess and be done with it." It wasn't until 6 weeks into it that I think STEVE mentioned that his digestion was better and he'd noticed I hadn't been hunkered over with my stomach as much. I sat in the living room and thought about it and realized I couldn't REMEMBER the last time my stomach was tore up.
It was quite a shock!
South Beach, except for the first phase, is mostly just a matter of eliminating processed foods, sugar, and white flour. I kinda hate using the name, since it makes it sound like a fad or something more finicky than it really is...which is just eating more whole foods, mostly.
For me, about the best thing is that means much fewer highs and lows - used to be, I was bouncing from one extreme to another both emotionally and energy-wise. This seems to help, a lot. Plus, as others have mentioned, my skin and hair have improved, and I don't have heartburn like I was starting to have fairly often.
The weight loss is a plus, and what originally got me interested...but it's the other aspects that will make me stick to it for good.
My hair has always been the one thing about me I've enjoyed - not the color, until I started dyeing it - but it's thick and rich. It's been even more so, and less greasy, since I started Atkins.
Of course, if there were a diet that would make my hair the color I pay it to be, I'd be on that. Sigh.
The Oklahoma Dairy inspector would know what's in the raw milk we buy...the dairy is inspected twice as often as a regular commercial dairy.
The lady we buy our milk from says the inspector buys his milk from them!
Mmmm! Unpastuerized milk is DE-LISH! Regular milk had a "cooked" taste to me after I started drinking raw. But I haven't had it since starting Atkins...I have had the raw cream though.
I wish I could get some of this heavy cream to you, Lil!
If the cows would eat grass, there'd be little to worry about. I believe it was Penn-State's ag department found that E. Coli can be nearly eliminated by witholding grain from beef in the couple weeks before slaughter. Seems the cow's intestinal flora (which can out-compete E. Coli bacteria) don't process grain well. It's too rich.
Oh yeah, sugar. Too much sugar makes me miserable! Thing is, I am not even that crazy about *most* sweets. But, when I start eatin' 'em, I'm an addict. I eat stuff I don't even like - just for the sugar!
One thing the Hobbit Hole knows how to do...talk about FOOD! LOL
It's a pretty pleasant thing to me to get up in the mornings and just have some stiffness from injuries. I can work those out by moving around and after a bit - suddenly I am not achy. Before, it seemed like I was just achy all the time.
LOL... now, I *feel* like a spring chicken! And I've got energy and vitality like one too - I think...

I'm better off without it.
But as long as I don't eat MUCH of it, I actually don't crave it. So I'll stick to having a few pieces of chocolate once in awhile. Gotta have chocolate!
