Good morning! Here are a couple of recipes. I think I gave you the almond bread one before, but here it is again.
I found that I can buy whole raw almonds at Sams for $8 for 3lbs...I grind them up in my coffee grinder to make my own flour. Works great and is cheaper that way.
Low Carb Almond Bread
Preheat oven to 350°
(31.6 Net Carbs for entire recipe)
1¼ Cup Almond flour (15g)
1 tsp baking powder (1.27g)
½ tsp salt (0g)
8 Tbsp softened butter (.07g)
½ Cup Bulk Splenda (12g)
2 large eggs (1.0g)
¼ cup water (0g)
¼ cup heavy cream (1.66g)
1 tbsp chopped almonds (.5g)
1 tsp almond extract (0.1g)
Sift together the dry ingredients. In a separate bowl, mix the butter, eggs, water, cream and extract together. Stir in the dry ingredients.
I use a plain round cake pan, I grease the sides and flour with protein powder, then line the bottom with parchment. Or you could just grease and flour the whole pan...I imagine you could even use regular flour to dust the pan with...gee, how much could it add? I wouldn't think much.
I run a knife around the edges after its done just to be on the safe side...
Bake about 30 minutes, till spongy and a knife comes out clean. It doesn't rise much. Gently turn out onto a cooling rack...it's a bit crumbly at first but sets up to a dense cake. I cut mine into 16 very small wedges, which we eat like a cookie with tea in the evening.
Almond Flour Pancakes
Makes about 4 small pancakes
(5.5 Net Carbs for entire recipe)
5 Tbsp almond flour (3.0g)
1 Tbsp sour cream (0.5g)
1 Tbsp water (0g)
½ tsp baking powder (0.6g)
1 tsp oil (0g)
1 packet Splenda (1.0g)
1 tsp sugar-free syrup (0g)**
1 large egg (0.4)
**I used Atkins Vanilla syrup. I imagine maple would be good, or almond. I think you could probably skip it even.
I just whirred all this together and fried it up on a griddle. They don't raise huge like regular pancakes but otherwise, they are quite delicious! We ate them with sugar-free maple syrup.
