I've heard of people using other fiber products as well. Some sort of husk in water? I guess it's the...ahem...active ingredient in Metamucil.

Since you're never limited on vegetables with South Beach, I didn't have that problem...but I can see why you might for just the first little bit on Atkins.

You're welcome. It actually says in DANDR that you can have a tablespoon or more of psyllium husks or you can use flaxseed meal. I take that to mean a tablespoon or more of flaxseed meal too, if that's your preference. I would personally take as much flaxseed meal as I needed to keep things going. It's very low in carbs, very high in fiber and has all kinds of things that are good for you...those oils that help your cholesterol and such, you know? My last cholesterol check was 210...so, I'm hoping this will help.

See, that's where I differ with Dr. Atkins. He says keep your carbs at less than 20 net, right? Then he says eat a cup of salad veggies loosely packed.

I didn't do that. I did ours by the scale...I weight all our veggies on a postage scale and then enter in into the USDA database by grams of weight...

8 oz of spinach x 28.35 = 226.8g

The database has it in blocks of 100g, so 226.8 divided by 100 = 2.3 rounded. The net carbs for this much raw spinach is only 3.25g.

This is a HUGE amount of raw spinach! Fills a large bowl! Cooked lightly in olive oil, it makes a fair sized dish!

Spinach is just one of the many vegetables I'm using more than I've ever used 'em in my LIFE before. We used to have frozen spinach once in a great while...just boiled with a little vinegar. But it sautees sooo nicely, and it's such a pretty dark green color, and it's GOOD! Have been having it in salads, too, but mostly in stirfry and cooked, like you said, in a little olive oil with other veggies. Usually I cook the others first, then at the end toss in as much spinach as will fit, put a cover on and let it cook three minutes or so.
