Yesterday, we made some peach cobbler with Splenda 'stead of sugar. It was my mom's "cuppa cuppa cup" recipe. Vey yummy. And in the words of Chef Tell, "very simple, very easy." I honestly think that instead of being a diet recipe it is more of a diabetic recipe. Still, imagine if you used sugar, whole milk, and real butter!!! Yikes!
1 c. sugar (or splenda)
1 c. flour
1 c. milk (2% or skim)
1 can peaches (I use the light syrup stuff)
1 tsp vanilla
2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1 stick margarine (I use low fat/low cholersterol stuff)
In a 9x13 baking pan melt stick of margarine in 375 degree oven.
Mix rest of ingredients together in a bowl except for the peaches.
Pour carefully into baking pan.
Add peaches to baking pan.
Bake until bubbly and/or dough is light gold in color (abt 20-30 minutes).

LOL, that is funny. On another note... the City of Dallas picked their new Chief today. He is (er.... was?) the deputy city manager of Arlington, my home town. 1) I am glad they picked a local boy to do it. 2) I sure hope he can avoid scandal, unlike his predecessors.

My mother is giving us the old ice cream maker. Otherwise, it is getting thrown away. I was talking to PE last night... we could make any kind we want, and cater to *our* needs 'stead of longing for the$5.00 blue bell ice cream.
"Blue Bell, the best ice cream in the country..." (it is also the most difficult to scoop unless you soften it beforehand!)

Cool! What projects are you working on now? Getting lots of stuff up to snuff for the wedding? :-)
Marty just left. She and I have literally talked the last 3-1/2 days away. Not only did we lost track of time every time - but it was like hours and hours of time! Last night it was 2:30AM... we both thought it was about 10. That kind of losing track of time. I got a terrible sunburn that way from sitting in the yard and talking. We thought we'd only been out about an hour..... it was more like 5 hours! I am a beet!
We didn't sit in the yard during daytime hours after that!
