Yesterday, we made some peach cobbler with Splenda 'stead of sugar. It was my mom's "cuppa cuppa cup" recipe. Vey yummy. And in the words of Chef Tell, "very simple, very easy." I honestly think that instead of being a diet recipe it is more of a diabetic recipe. Still, imagine if you used sugar, whole milk, and real butter!!! Yikes!
1 c. sugar (or splenda)
1 c. flour
1 c. milk (2% or skim)
1 can peaches (I use the light syrup stuff)
1 tsp vanilla
2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1 stick margarine (I use low fat/low cholersterol stuff)
In a 9x13 baking pan melt stick of margarine in 375 degree oven.
Mix rest of ingredients together in a bowl except for the peaches.
Pour carefully into baking pan.
Add peaches to baking pan.
Bake until bubbly and/or dough is light gold in color (abt 20-30 minutes).

That does sound good. I wonder how it'd be with fresh peaches!
We still don't have very good fruit here, though we DID get some CA strawberries recently that are wonderful. Maybe it's just because I haven't been eating sugar, but I'm amazed at how sweet these were! Mmmm...
