Still round the corner we may meet...

Warning: When I make it, I make a lot of it. Also, if you want to add cut up or shredded chicken breast, it is also vey tasty. (That is how my mother does it.) I don't use the same recipe all the time, this is what I remember from the last time I made it.

1 lb chopped broccoli
2 c. uncooked rice (cook/prepare in 4 c. water according to directions on package)
1 can cream of mushroom soup
1 can cream of chicken soup
1/2 c. sliced mushrooms (or 1 can)
1/2 brick of velveeta cheese, cubed
1/4 tsp. cayenne pepper
salt to taste
black pepper to taste
crushed club crackers (or bread crumbs) for top

Steam the broccoli in a large skillet, while cooking the rice in at least a 2 quart pot. Saves time that way. Once the rice is done, add the all other ingredients except for the crackers or bread crumbs. Over med-low heat, stir together until the cheese is melted.

In a 9X13 baking pan, mix the broccoli and the rice mixture together. Sprinkle the top with the crackers. Bake at 350 degrees for 15-20 minutes, or until crackers are lightly browned (You don't *have* to bake this if you don't want to, since everything is already cooked and warm ~ I have been known to eat this straight from the skillet, skipping the whole baking part).

Well let's see. I quit working at Sprint PCS, and no longer stood around posting all day at work. I then got busy student teaching, and now have a real teaching job that has kept me busy, busy, busy. Things are starting to slow down a little.

Welcome! You will be forever ruined for the mix version, but I have to admit that the mixes *are* easier.

When I was a kid, we had this with BBQ chicken, baked chicken with lemon and pepper seasoning, chicken Kiev, or rarely with steak. It is also good with a baked whitefish. Of course, if you add the chicken to the recipe, you don't need anything else with it, except for maybe a salad.

Oh! My mother does not at all approve of anime and manga - she thinks it's junk, or hentai. I keep my collection locked up in a trunk. With a combination lock.

Grr, we lost power for two seconds, and the network was down for fifteen minutes.
