Good morning everyone. It's a miracle I'm here. Got home late last night, but am having severe computer problems (on top of having a heck of a time finding the path into FR, LOL) so I am going to try to get this posted for Amy before I crash again.

Oh, no. Frost's birthday? I was sure you were going to announce, da, da: Spinach Festival Day!
The Spinach Problem
My friend has spinach in his teeth.
I don't know what to do.
If I tell him, he'll be mad at me.
If I don't, he'll be mad too.
If I let him walk around
with spinach hanging from his gums
how can I believe that we're true friends,
that we're true chums.
But if I'm the one who tells him,
He might think that I am mean.
My friend has spinach in his teeth,
but I don't want a scene.
Maybe if I wrote a note
and didn't sign my name.
Maybe if I gave him hints
like part of some fun game.
No, I just can't do it.
I just cannot tell my friend
that he has spinach in his teeth,
our friendship sure will end.
Uh Oh, here comes Rebecca.
She is sure to make a fuss.
She'll see the spinach in his teeth
and then tease both of us.
She told him! Told him right up front!
And now he's thanking her.
I can't believe it, there they go,
great friends, Oh, I'm so sure!
So now I sit here all alone.
Shoulda spoken, I suppose.
Think I'll go tell Rebecca

SPINACH, MUSHROOMS, AND BROWN RICE WITH CHEESE
Ingredients
1 tb Olive oil
3 tb Butter
1 lg Garlic clove -- minced
1 c Mushrooms -- sliced
1 1/2 lb Spinach -- shreded
(about 5 cups)
1/4 ts Pepper
1 1/4 c Chedar cheese -- shreded
1/2 c Cottage cheese -- small
Curd
3 c Short-grain rice -- cooked
6 sl Mozzarella cheese
Paprika
Method
Preheat oven to 400.
Oil an 8" square baking dish.
Heat oil and butter in a 10 inch skillet.
Add garlic and mushrooms and cook, stirring, for 1 minute.
Add spinach and stir and cook about 2 minutes, or until spinach wilts.
Stir in pepper, chedar cheese, and cottage cheese and set aside.
Make a layer of rice on bottom of baking dish.
Spoon spinach cheese mixture evenly over rice.
Top with mozzarella cheese and sprinkle with paprika.
Bake for 8 to 10 minutes then broil for about 1 minute, or until cheese is bubbly and brown.
Cut into squares and serve very hot.
Spinach: Not enjoyed by all parties.

LOOK for posts from John Robinson (or perhaps Jim Robinson). He is real good to post there so folks know what the problems are and how long before the problem is resolved, etc.
