I would think they wouldn't appear black in a daylight shot. Not so sure. You might be looking at the shadow side as your looking in the general direction of the sun. Mars has a thinner atmosphere and may allow this phenomena. But Mars science is not my area so I am only guessing...

It depends. There is no real atmosphere on Mars to speak of that would filter out colors. Just as you can see the dark side of the moon here on Earth, so too on Mars. My money is on Deimos as it is much farther away.
