Sant's book is an overall survey of dragon lore divided into two major sections. The first goes through various characteristics of dragons--psychological, physiological, magical, etc. The second summaries some major dragon legends from different traditions, culminating with sections on Tolkien and Le Guin's dragons. It has beautiful illustrations by an artist named Ciruelo.
I try to avoid getting into denominational divisions online in mixed denominational company :) But since you mention Calvinism, I will mention that one thing I've done is a comparative study of ideas about predestination in Aquinas and Calvin, which I found very interesting. Anyway, how do you find church affecting your writing?--sounds intriguing.

Sounds like an interesting book!
I'm not really sure how church is affecting my writing. It seems to be making me more... deliberate, you might say. And I'm actually working with predestination to some extent in my story though I still haven't figured it out entirely (one of my main characters is mildly precognitive - this is the magic/SF story - and I'm trying to figure out how she handles it).
Also I want my writing to have Meaning and Depth and stuff, but I don't know how to do that so it's probably best I don't even try.
