The Hobbit Hole V - Where Many Paths and Errands Meet...
ecurbh

Posted on 12/11/2003 2:07:57 PM PST by ecurbh

Welcome to The Hobbit Hole!

Where Many Paths and Errands Meet...

The Road goes ever on and on
Down from the door where it began.
Now far ahead the Road has gone,
And I must follow, if I can,
Pursuing it with eager feet,
Until it joins some larger way
Where many paths and errands meet.
And whither then? I cannot say.

I don't think it's chicken pox. I just had that about 6 years ago! Caught 'em from my boss' little girl at work. LOL

You know, I didn't notice being bitten on Friday, but when I got home, my ankles were itching something fierce. Stealthy little beasties, apparently. I'm just trying not to scratch them and hoping the itch goes away soon!

Ankles are bad but I've got bites EVERYWHERE. Underside of my knees, up my arms, on my face, I think there's even one on my scalp. I may have to sleep with gloves on.

LOL, I was kiddingaboutit. But seriesly, Jenb, you can get 'em more than once. Wneighbor's case though pretty much cinches it that y'all don't have it.

When you get the 'pox when you are older it is much worse, and the likelihood of ever having it again approaches zero.

Taquitos that I make are more in the method than the ingredients so I will describe it for ya. I make 'em the way my little abuelita made 'em. :-)

First, dice up some taters and parboil 'em. Don't let 'em get soft then drain the water and run cold water over 'em till they are cool so they don't keep cookin and get too soft.

While the taters are cookin you can fry up some sausage and/or bacon. We had both in em at entmoot. Ya fry em up and then set em aside on the plate leaving all the grease in the skillet.

In the grease fry some smushed garlic and onion. When the onion gets close to done add in some chopped up chiles. Include mild bell peppers for flavor and hot ones too.

When all those are sauted to being limp have the grease real hot then dump in the cooled taters. Stir 'em around browning but turn down the heat. Add salt, pepper, cominos, basil, red pepper and more garlic powder. Cook on kinda low heat crumble up the meat in the taters and cook for a half hour or so.

Then, just crack some eggs over all that mixture and stir it around and let it all cook till the eggs are done. Ya may want more spices added into the eggs.

That's the fillin. Tortillas are best cooked slow over a fire. Just till soft. They kinda bubble when they're ready.

How's that?

Yep. I had to come over here so Aunt Cheryl could take care of me for about a week. I'm glad I had a good aunt who could take care of me. It was nasty! I think I was about 38 then.
